This week has flown by and been one of my hardest weeks ever all in one. Life is tough right now. But one thing this week has in common with the rest of “normal” life is that there still do not seem to be enough hours in the day. Between working to get recipes on here for you fine folks (and my behind the scenes duties), trying to homeschool/struggle through e-learning with two kids and trying to keep up with house and yard work, I am beat. You all may know me as the Carb Queen or Sugar Princess, but I am also the Queen of Quick and Easy Recipes. And this Taco Sloppy Joes recipe is definitely one for the books! Yum!
Cris made this recipe in a crock pot a while back under the name Taco Joes. So when we were thinking up recipes to convert to oven and stove recipes for you guys and she mentioned this one, I was eager to jump on it!
While I was making it, the kids kept saying, “What is that?! That smells good!” and were eager to get some once Mommy had taken the pictures. That’s part of the curse of being a food blogger’s child. You don’t eat until the pictures are taken! lol
I was quite happy to eat mine on a bun, but Ryder (my 7 year old) had different visions for this recipe. He told me he wanted it as nachos. I thought he meant like we do taco salads. He said that sounded good too, but he wanted them on a plate like nachos. Great idea kiddo! My 5 year old was in a bit of a hangry fit, but refusing to eat….until she saw her Bubby’s plate. Her fit was over, and she was ready to eat! My guess is that your family will love this too!

Taco Sloppy Joes
Ingredients
- 3 lbs ground beef browned & drained
- 32 oz refried beans (2 – 16 oz cans)
- 10 oz can enchilada sauce
- 1 oz pkg taco seasoning (some packets have 1.5 oz)
- 16 oz jar salsa
- 25 hamburger buns split
- Garnish: shredded Cheddar cheese shredded lettuce, chopped tomatoes, sour cream
Instructions
- Place all your ingredients except buns and garnish in your large pot and stir until well combined
- Heat over medium high heat, stirring occasionally, until heated through
- To serve, fill each bun with 1/3 cup of Taco Joe mixture and garnish as desired.
