I just love a good potato soup recipe. This Crock Pot Bacon Potato Soup for Two recipe is based on one of my favorite potato soups. It does not take a ton of ingredients, but the flavor is wonderful. With this delicious soup, you have two hearty servings to fill you up.

I used a kitchen scale to figure out how many potatoes make up one pound. I had two very large potatoes, and they equaled one pound exactly. If you do not have a kitchen scale, you can take an educated guess. However, I understand if that is a little scary for some, because that was me when I first started cooking. Here is a guideline for those that need it: 2 extra-large potatoes or 2 large potatoes and a small potato or 3 medium potatoes or 4-5 small potatoes. I hope this helps!

What You Will Need for Crock Pot Bacon Potato Soup for Two

Ingredients Needed

  • 1 lb Russet potatoes, washed, peeled and cut into small cubes
  • 1 tablespoon diced white onion
  • 5 strips bacon, cooked crisp and crumbled, divided
  • 1/4 cup sour cream
  • 2 cups chicken broth
  • 1/4 cup canned cream of chicken soup
  • Optional garnish: shredded cheddar cheese

  • Prep Time: 10 to 15 minutes
  • Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, stirring halfway through the cooking time

  • Place 1 lb Russet Potatoes (washed, peeled and cut into small cubes), 3 slices bacon (cooked crisp and crumbled), 1 tablespoon onion (diced), 1/4 cup sour cream, 2 cups chicken broth and 1/4 cup canned cream of chicken soup in a 2.5 Quart, 3 Quart OR 4 Quart Slow Cooker and stir until well combined.
  • Cover and cook on low 4-6 hours or high for 2-3 hours, stirring halfway through cooking, if possible.
  • Serve bowls of soup topped with 2 slices bacon cooked crisply and crumbled bacon.
