This Crock Pot Bacon Potato Soup recipe is a classic, hearty soup that is great for any time you want a filling soup!

How to Make Bacon Potato Soup in a Crock Pot

I made this recipe for the first time years ago, but I thought it was time for a little revamp. So, now you have this amazing Crock Pot Bacon Potato Soup. It is very similar with just a couple changes. I hope you love these changes just as much as my family does!
If you want to put this recipe on in the morning but do not have time to prep it in the morning, you can do a few things ahead of time to make this a dump and go recipe. The first thing you can do is to fry your bacon ahead of time, divide it, crumble it and store it in the fridge until you are ready to throw this together. You can do the same with your diced onion. For your potatoes, you can peel and cube them the night before and store them in the fridge, covered in water. With the potatoes being cubed, I do not recommend letting them sit for longer than 10 to 12 hours. If you do these things, you can drain your potatoes then dump and go in the morning.

What You Will Need for Crock Pot Bacon Potato Soup
Ingredients Needed
- 5 lbs russet potatoes, peeled and cubed
- 12 oz package of bacon, cooked crisp, divided and crumbled
- 1/3 cup diced yellow onion
- 1 cup sour cream
- 5 1/2 cups chicken broth
- 10.5 can cream of chicken soup
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Skillet or griddle
- Measuring cups
- Can opener
- Small stirring spatula
- 6 quart slow cooker
Time Needed
- Prep Time: 15 to 20 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours high, stirring halfway through cooking if possible

Crock Pot Bacon Potato Soup
Ingredients
- 5 lbs potatoes peeled and chopped
- 12 oz bacon cooked crisply, divided and crumbled
- 1/3 cup onion chopped
- 1 cup sour cream
- 5 1/2 cups chicken broth
- 10.75 oz. cream of chicken soup
Instructions
- Place all ingredients, except 4 pieces of bacon, in a 6 quart crock pot and stir.
- Cover and cook on low 6-8 hours or high for 3-4 hours, stirring halfway through cooking, if possible.
- Serve bowls of soup topped with reserved crumbled bacon.
