A couple of weeks ago, the kids and I were down at Mom and Dad’s house. Supper time came around, and Momma served up this delicious potato soup that we all loved. She made it on the stove, but I knew I could easily adapt it to make it a crock pot recipe. Not only does it has wonderful flavor, it is really filling and just a great comfort food that even my super picky eater loved. She even asks for seconds!

When making this delicious soup, you will want to watch it closely the first time you make it so you don’t overcook your potatoes when they are cooking. I was watching mine closely and thought it was going to take forever. Then (it felt like) all of a sudden, they were really done, so I drained them immediately. Mine were done after about 2 hours and 15 minutes on high. If I would have let them go to two and a half hours, they would have just fallen apart completely when I mixed everything else in.

What You Will Need for Easy Crock Pot Potato Soup

Ingredients Needed

  • 6 to 8 medium Russet potatoes, peeled and cut into large cubes
  • 1/4 teaspoon salt
  • 1 tablespoon dried minced onion
  • Water (enough to cover your potatoes)
  • 1/4 cup butter
  • 2 cans cream of mushroom soup
  • 2 1/3 cups cubed Velveeta (about 1/3 of a 32 oz block)
  • 1 cup milk
  • Salt and pepper to taste

  • Prep Time: 10 minutes
  • Cooking Time: 4 to 5 hours on low or 2 to 2.5 hours on high, plus an additional 15 to 30 minutes on high

Instructions

  • Put your potato cubes, 1/4 teaspoon of salt and dried minced onion in your 6 quart slow cooker.
  • Add enough water to cover your potatoes.
  • Cover and cook on low for 4-5 hours or high for 2-2.5 hours. Watch closely to see when your potatoes are fork tender.
  • Drain your potatoes into a large colander and set aside.
  • Add all your remaining ingredients to your 6 quart crock pot and stir until well combined.
  • Stir in your cooked potatoes and cook on high for additional 15-30 minutes, stirring as needed, until your cheese is melted and mixes in.

  1. What can be substituted for the cream of mushroom soup? Many of your recipes call for this and I just hate it.
