How to Make Hearty Taco Casserole in a Crock Pot

A while ago I made a delicious Crock Pot Beefy Potato Taco Casserole and Tracy, one of our readers, said she used nacho cheese sauce instead of cheddar cheese soup and thought that adding black beans would be good. I thought I would try out Tracy’s change and her suggestion. The result was this amazing Crock Pot Hearty Taco Casserole!
My family loved this recipe. The flavors of all the ingredients come together to give you a flavorful meal. The ground beef, potatoes and beans all come together to give you a dish that will definitely fill you up! Personally, I loved that it was super easy to throw together!
I used to hate making any recipe that had me cut up or slice potatoes. What I did not realize at the time was that my problem was not the potatoes. My problem was my knife was too dull. I know this may sound simple, but I really had no idea how easy a really sharp knife could make food prep. I accidentally ran across Rada Knives because they were being sold for a fundraiser, and I ended up getting a couple. They were a game changer for my food prep. What You Will Need for Crock Pot Hearty Taco Casserole
Ingredients Needed
- 1 lb lean ground beef
- 2 cloves garlic, minced
- 4 potatoes, peeled and sliced thin
- 15 oz can black beans, undrained
- 1/4 cup beef broth
- 1 oz packet taco seasoning
- 15 oz cheddar cheese sauce
- 1 cup shredded cheddar cheese
Equipment Needed
- Skillet and strainer or micro-cooker
- Garlic press
- Vegetable peeler
- Sharp knife
- Measuring cups
- Can opener
- Spoon
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 4 to 5 hours on low or 2 to 2.5 hours on high, turning your insert halfway through cooking if your slow cooker doesn’t cook evenly

Crock Pot Hearty Taco Casserole
Ingredients
- 1 lb ground beef
- 2 cloves garlic minced
- 1 oz packet taco seasoning
- 15 oz nacho cheese sauce
- 15 oz can black beans undrained
- 4 medium Russet Potatoes sliced thin
- 1 cup shredded cheddar cheese
- 1/4 cup beef broth
Instructions
- Brown your ground beef with garlic and drain.
- Place your thin potato slices in the bottom of a slightly greased 6-quart crock pot.
- Pour your undrained beans on top of your potatoes.
- Spread your ground beef evenly on top of everything.
- Add your beef broth.
- Sprinkle your taco seasoning on top of everything.
- Spoon your nacho cheese sauce evenly on top.
- Sprinkle your cheese evenly across the top of the everything
- Cover and cook on low for 4-5 hours or high for 2-2.5 hours, turning your insert halfway through cooking if your slow cooker doesn't cook evenly. It is done when your your potatoes are fork tender.
