This recipe is super easy to throw together and cooks up fast! You are gonna love it! It is perfect for a weeknight dinner if you cook it on high or weekend lunch if you cook it on low! Whenever you want to have it, you are going to want seconds!

Crock Pot Taco Hamburger Casserole
Ingredients
- 3 lbs ground beef browned and drained
- 2.5 oz taco seasoning (2 – 1.25 oz packets)
- 1 cup water
- 1 1/2 cups Mexican blend cheese divided
- 15 oz refrigerated biscuits (2 – 7.5 oz tubes)
Instructions
- Place your ground beef in the bottom of your lightly greased 6-quart slow cooker
- Mix together your water and seasoning
- Pour over your ground beef and stir until all your beef is coated evenly
- Sprinkle 1 cup of cheese evenly across your beef
- Place your biscuits evenly across the top of everything
- Sprinkle remaining cheese over the biscuits
- Put a few paper towels under the lid of your crock pot to catch condensation, cover and cook on low for 4 hours or high for 2 hours

This looks so delicious and easy to make! Would it also work in a casserole crock pot? I actually have two casserole crocks; one is rectangle and the other is an oval one. Do you think one would work better than the other?
I have only made this in a 6 quart slow cooker and have not tried making this in my casserole crock pot because of how shallow the insert is. With baking the biscuits on top of everything, you need a nice gap between the top of the biscuits and the top of the crock pot for the paper towel to catch the condensation. If the paper towel touches the biscuits because it isn’t tight enough or because there isn’t a big enough gap between the top of the biscuits and the top of the insert, the biscuits the paper towel touches won’t bake up right. A traditional 6 quart insert is deep enough to keep the paper towel away from the biscuits. I don’t think the casserole crock pot is deep enough. Hope this helps.
Do you cook the meat first?
Yes. It is browned and drained first. Enjoy!
How would it work if I wanted to layer this? I have a pretty big crock pot.

I’m not sure I understand what you mean. The layers in the recipe will work in a bigger crock pot. The biscuits will be spread out more though. Are you wanting to double the recipe maybe? Can you clarify for me?

If I wanted to cook this in a 4 qt. crock would I just cut the ingredient amounts by half? Thanks.
I haven’t tried halving this recipe or making it in a 4 quart, but think it could work. Make sure you watch it closely the first time you make it to adjust the cooking time as needed. If you give it a try, let me know how it goes!
Could you please post a photo of how you use the paper towel to absorb the condensation. I am having trouble figuring that one out, and there’s definitely a lot of condensation. Thanks very much!

I don’t have a way to put an image in the comments, but can try to explain further. Take your paper towels and lay them across the top of your crock pot insert. Place your lid on top of the paper towel. Then pull the edges of the paper towel so that it is tight and not drooping under the lid. I hope this helps!

You do not have to bake your rolls before placing them in the crock pot. They will bake up while in the crock pot. Enjoy!
