Ingredients

  • 16.5 oz lemon cake mix
  • 2 large eggs divided
  • 1/2 cup butter melted
  • 8 oz pkg cream cheese
  • 2 cups powdered sugar
  • 1 tablespoon vanilla extract

Instructions

  • Mix together your cake mix, one egg and butter in a large bowl or with a mixer.
  • Press your batter into the bottom of a lightly greased 6-quart crock pot and set aside.
  • In a different bowl, mix together your remaining egg, cream cheese, powdered sugar and vanilla until smooth (I used my mixer.)
  • Pour your cream cheese mixture on top of your batter and spread evenly.
  • Place a couple paper towels under your lid, cover and cook on high for 1 1/2-2 hours, turning your slow cooker insert halfway through if your slow cooker doesn't cook evenly

Can this recipe be made in the oven and not crock pot? I need to serve 80 people and would love to try this one.

I have not made this in the oven, but think that it could work. If I tried this in the oven, I would most likely give it a try at 350. I would start checking it around the 20-25 minutes, watching it closely until it is done. I hope this helps. If you give it a try, let me know how it goes!

I’m not sure what I did wrong! Mine was burned on the outside and very runny on the inside! So sad!

Oh no Emily! I don’t think it was you. I think it was your crock pot. It sounds like your crock pot cooks hot. I have a crock pot that does that to me. I tried a recipe in that particular crock pot and got the results you did. I tried the same recipe in a crock pot I know bakes well, and the recipe turned out great. I’m so sorry yours didn’t turn out well. You might try it in a different slow cooker if you have another one.
