I love lemon desserts! Lemon cake, lemon bars, lemon pudding, you name it! I have loved Big Red Poke Cake (which I made into a crock pot recipe: Crock Pot Cream Soda Poke Cake) since I was a kid. So, I got to thinking….lemon + poke cake will equal deliciousness! And boy was I right! You are absolutely going to love this cake! If you love lemon, you are sure to love this!

Crock Pot Lemon Poke Cake Recipes
Crock Pot Lemon Poke Cake
Ingredients
- 1 white cake mix , prepared
- 12 oz can lemon-lime soda
- small package lemon jello
- 1 tub frozen whipped topping , thawed
- 1 small box instant lemon pudding
Instructions
- Lightly spray your 6-quart slow cooker (I used Sir Hamilton, my Hamilton Beach Programmable Insulated Slow Cooker) with cooking spray
- Pour your prepared cake mix in your slow cooker
- Place 3-4 paper towels under the lid, cover and cook on high for 1-2 hours
- Once your cake passes "the toothpick test", remove your crock from your slow cooker and let it cool
- When your cake is cooled, poke holes in your cake with a toothpick
- Mix together your lemon-lime soda with your jello
- Evenly pour your jello mixture over your cake
- In a different bowl, mix together your whipped topping and pudding mix
- Spread your topping evenly over the cake

My slow cooker runs hot so, for many things, I prefer baking in a 9 x 13 pan. What would be bake time? Any there any other needed changes? Thanks!!

Hi Bev!
I haven’t tried making this in a 9×13 pan in the oven. If I did, I would start with the cooking times and temperature on the back of the mix box. Be sure and watch it closely so you can adjust the cooking time as needed. If you give it a try, let me know how it turns out!

I don’t understand the paper towel placement. They would fall on the cake batter? Please help..lol

Here to help Mary! You will lay the paper towels across the top of your unit (depending on the size of your paper towels, it will vary how many it takes to get across the top of your unit in one layer) and place your lid on top of the paper towels. Then you will gently tug at the edges of the paper towel so it is taut, but not so hard that you tear your paper towels. Hope that helps!

Do you think I could do this in an 8 quart Instant Pot, without the paper towel?

We test our recipes (sometimes over and over and over until we get it just right) so that our readers can have the greatest chance at success, and we deal with working the quirks out. I haven’t tried this recipe in an Instant Pot yet, so I don’t want to make a suggestion without making it myself first. I’ll be sure and put it on my list to try in the Instant Pot!

Would this work in the casserole slow cooker?

Hi Kimberly!
I wouldn’t recommend making this in the casserole crock pot. The cake rises quite a bit, so I am afraid it would get into paper towel if it was made in the casserole crock.
