We have a family run Mexican restaurant in our small town. It has AMAZING salsa. So, I thought I would give Cris’ Homemade Crock Pot Salsa in my electric pressure cooker and see how close I could get to the taste of my favorite salsa at El Compadre. I have to tell ya folks, it is pretty daggone close! So yummy! You and your family and friends are gonna love it! Better yet, it is super easy to make! Score!

Homemade Instant Pot Salsa Recipe
Homemade Instant Pot Salsa
Ingredients
- 8 Roma Tomatoes whole
- 12 oz yellow sunburst tomatoes or grape tomatoes
- 2 sweet onions roughly chopped
- 1 red bell pepper roughly chopped
- 1 green bell pepper roughly chopped
- 1 tablespoon garlic minced
- 28 oz crushed tomatoes
- 1 lime squeezed
- cilantro (to taste) chopped
- salt to taste
- 1 bag tortilla chips
Instructions
- Place all your whole tomatoes in your 6-quart Instant Pot and gently smash until the skin on your tomatoes breaks and the juices come out (do NOT pulverize your tomatoes, just press on them enough to get the juices out)
- Stir in all remaining ingredients except lime, salt and cilantro
- Seal and cook on high pressure for 5 minutes
- Natural release for 10 minutes, then quick release
- In batches, blend cooked ingredients until salsa reaches desired consistent.
- Stir in lime juice, cilantro and salt to taste. Then serve with chips.

Didn’t make this recipe but read it 3 times. Did you leave out something? The spicy hot factor. Jalapeños or crushed red pepper or some other chili. Cannot imagine ANY salsa without chili peppers.
