We absolutely love pepperoncinis. So the other day when I was trying switch up our regular Mississippi Roast night, I decided to try the pepperoncinis with our favorite marina sauce.
Now, you guys KNOW how crazy Mikey is about Mississippi Beef and you can imagine how much of a job it was to convince him to try something different, but he absolutely LOVED it!
How to Make Italian Beef Sandwiches Low Carb
For recipes that involve sandwiches, we either eat as a salad, on a low carb bun, in a low carb tortilla or low carb lavash wrap.
Additionally, we try to use the lowest carb marinara sauce we can find.

Quick and Easy Crock Pot Italian Beef Recipe
Crock Pot Italian Beef (Low Carb Options)
Ingredients
- 3 lb Chuck Roast (can use up to a 5 lb roast)
- 24 oz Marinara Sauce
- 1/2 cup Beef Broth
- 1/2 cup sliced pepperoncinis
- 1/2 cup pepperoncini juice
- Buns and Cheese
- Salt and Pepper to taste
Instructions
- Place the roast in the slow cooker.
- Season with salt and pepper.
- Top with pepperoncini slices.
- Pour juice over top of roast.
- Pour marinara over the top of the roast.
- Use broth to rinse out the marinara sauce jar and pour over the roast.
- Cook on low for 8-10 hours. (Note: If your slow cooker cooks hot, begin checking at 6 hours)
