How to Make Bacon Chicken Potato Soup in a Crock Pot

The idea for this Crock Pot Bacon Chicken Potato Soup actually came from a comment from one of our readers. Carolyn P. commented on our Crock Pot Chicken Potato Heaven recipe that she likes to make it into a soup. I thought that sounded like a lovely idea and gave it a try. The results are this delicious soup that is flavorful and filling.
This is definitely not a dump and go recipe. There is a lot of cutting involved. Honestly, I used to hate to make any recipe that had me cutting potatoes or chicken. Then I learned the value of a good, sharp knife. I am a huge fan of Rada knives and have bought this set for loved ones to get them started with some amazing knives. (This post is not sponsored. I just really love these knives.) Having a sharp knife to cut up your potatoes and chicken will make prep for this recipe go by much faster, and the end result is definitely worth your time!
What You Will Need for Crock Pot Bacon Chicken Potato Soup
Ingredients Needed
- 2 lbs boneless, skinless chicken, trimmed and cut into cubes
- 1 small onion, diced
- 8 medium russet potatoes, peeled and cut into small cubes
- 16 oz Velveeta, cubed
- 8 pieces bacon, cooked crisp and crumbled, divided
- 1 teaspoon garlic salt
- Pepper to taste
- 32 oz carton chicken broth
- 1 1/4 cup milk
- Shredded cheddar cheese
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Whatever you need for your preferred method of frying bacon.
- Measuring spoon
- Measuring cup
- Wooden spoon
- 6 quart slow cooker
Time Needed
- Prep Time: 20 to 25 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, stirring once or twice

Crock Pot Bacon Chicken Potato Soup
Ingredients
- 2 lbs boneless, skinless chicken cut into large cubes
- 8 medium Russet Potatoes peeled and cut into small cubes
- 1 small onion diced
- 16 oz Velveeta cubed
- 8 slices bacon cooked crisp and crumbled, divided
- 1 teaspoon garlic salt
- pepper to taste
- 1.25 cup milk
- 32 oz chicken broth
- garnish: shredded Cheddar cheese
Instructions
- Put all your ingredients, except 3 pieces of bacon and shredded cheddar cheese, in your 6 quart crock pot and stir until well combined, making sure your potatoes are submerged in the liquid.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring occasionally
- Top servings with remaining crumbled bacon and shredded cheddar cheese.
