I’m always trying to think of a new, easy recipes that taste good. I do believe that I hit all the marks with this delicious Easy Crock Pot Hobo Casserole. My family, even my picky eater, gobbled this dish right up! It tastes that good!
I used frozen diced potatoes so that I wouldn’t have to wash, peel and dice potatoes. I also wanted this to cook up quickly, and frozen diced potatoes cook faster than raw potatoes. Since the ground beef and onion are already cooked, a longer cooking time isn’t necessary for them. The amount of time this recipe is in the crock pot is just enough for the potatoes to cook and the flavors of the ingredients to meld together.
What You Will Need for Easy Crock Pot Hobo Casserole
Ingredients Needed
- 1 lb lean ground beef
- 1/3 cup diced white onion
- 3 cups frozen diced potato hash browns, kept frozen
- 1/2 teaspoon garlic salt
- 10.5 oz can cream of mushroom soup
- 1 teaspoon minced garlic
- 1 cup shredded cheddar cheese
Equipment Needed
- Sharp knife
- Cutting board
- Skillet and strainer or micro cooker
- Meat chopper or wooden spatula
- Measuring cups
- Measuring spoons
- Garlic press
- Can opener
- Spoon
- Large mixing bowl
- Stirring spatula
- Cooking spray
- 3 Quart Slow Cooker or 4 Quart Slow Cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly

Easy Crock Pot Hobo Casserole
Ingredients
- 1 lb lean ground beef
- 1/3 cup diced white onion
- 3 cups frozen diced potatoes kept frozen
- 1/2 teaspoon garlic salt
- 10.5 oz Can Cream of Mushroom Soup
- 1 teaspoon minced garlic
- 1 cup shredded cheddar cheese
Instructions
- Brown 1 lb lean ground beef and 1/3 cup diced white onion together in a skillet or micro cooker and drain.
- Put browned ground beef, 3 cups frozen diced potatoes (kept frozen), 1/2 teaspoon garlic salt, 10.5 oz Can Cream of Mushroom Soup and 1 teaspoon minced garlic in a large bowl and stir until well combined.
- Lightly spray a 3 or 4 Quart Crock Pot with cooking spray and spread mixture evenly in the insert.
- Sprinkle 1 cup shredded cheddar cheese evenly on top of everything.
- Cover and cook for 3-4 hours on low or 1.5-2 hours on high, rotating your insert halfway through the cooking time, if your slow cooker does not cook evenly. (It is done when the potatoes reach desired tenderness.)
