This Cheesy Crock Pot Smoked Sausage and Potatoes recipe based off of our Crock Pot Cheesy Potatoes and Chicken and both are total crowd pleasers! It is really hard to decide what is the best part of this recipe. Preparing this recipe is super simple and could even be done ahead of time. (You will just want to put your peeled and cubed potatoes in a bowl and cover them with water and all your other ingredients in air tight containers. Then the next day you can just dump everything into your crock pot!) The amazing flavor of this recipe is also a contender for being the best part of this recipe! Young and old alike have raved over how delicious this meal tastes.
When I make a recipe using Velveeta (or your favorite generic substitute), I usually try, if possible, to not have the cheese cubes at the very edge. This way it will be able to melt without burning on the sides. Once it starts to melt, and you stir it in to make the cheese sauce, you should be good to go! I stirred mine a few times throughout the cooking time so it was blended well. I hope you enjoy this recipe as much as we do! Yum!

Ingredients Needed
- 4 medium potatoes, peeled and cut into small cubes
- 1 small onion, diced
- 16 oz Velveeta, cubed
- 28 oz smoked sausage (2 – 14 oz packages), cut into slices
- salt and pepper to taste
- 2 cup milk
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Measuring cup
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, stirring occasionally

Cheesy Crock Pot Smoked Sausage and Potatoes
Ingredients
- 4 medium potatoes peeled and cut into small cubes
- 1 small onion diced
- 16 oz Velveeta cubed
- 28 oz smoked sausage cut into slices (2 – 14 oz packages)
- salt and pepper to taste
- 2 cup milk
Instructions
- Put all your ingredients in your 6-quart slow cooker with the potatoes on bottom
- Cover and cook on low for 4-6 hours or high for 2-3 hours, stirring occasionally.
- If a thicker sauce is desired, remove insert from heat and let it sit for 15-30 minutes, stirring occasionally, until desired thickness is achieved.
