We love hearing ideas from our readers. When I was looking at the pin for our Taco Crock Pot Hashbrown Casserole, I saw where reader Jenn S. said she added eggs, onion and peppers to the leftovers to make breakfast burritos. I LOVED the idea! So now you have this yummy Crock Pot Taco Breakfast Casserole recipe!

I listed the onions and peppers as optional. They would make a great addition to this recipe if you and your family like them. However, my kids prefer fresh peppers to cooked peppers and are not fans of onion. So I left them out. If you like them, add them in!

I love how simple this recipe is to throw together. If you use our Crock Pot Make Ahead Ground Beef recipe, it makes this recipe super simple and quick to throw together!

You can eat this recipe as is or wrap it up in a burrito shell! Either way, it is super yummy and sure to be a family favorite instantly! The burrito shell just makes this delicious breakfast more portable! 😉

What You Will Need

Ingredients Needed

  • 1 lb ground beef
  • 2 cloves garlic minced
  • 1 oz packet taco seasoning
  • 6 eggs, beaten
  • 10.5 oz cheddar cheese soup
  • 30 oz frozen shredded hashbrowns
  • 2 cups shredded taco style cheese divided
  • 1 small onion, diced, optional
  • 1 green pepper, diced, optional

Equipment Needed

  • Skillet
  • Colander or strainer (I love my on pot strainer)
  • Small bowl
  • Fork or whisk
  • Large Bowl
  • Spatula or wooden spoon
  • Measuring cup
  • Sharp knife and cutting board (for optional ingredients)
  • 6 quart Crock Pot or Casserole Crock Pot

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 2-3 hours on high

Ingredients

  • 1 lb ground beef
  • 2 cloves garlic minced
  • 1 oz packet taco seasoning
  • 10.5 oz cheddar cheese soup
  • 30 oz frozen shredded hashbrowns
  • 2 cups shredded taco style cheese divided
  • 6 large eggs beaten
  • 1 small onion diced, optional
  • 1 green pepper diced, optional

Instructions

  • Brown your ground beef with garlic and drain
  • In a large bowl, mix all ingredients together, except for 1 cup of shredded cheese and pour into lightly greased 6-quart crock pot or casserole crock pot
  • Top all the ingredients with your remaining cheese
  • Cover and cook on high for 2-3 hours
  • If desired and using a oven safe crock, place in broiler on high for approximately 90 seconds to brown cheese on top

    Can this be set for low not high? If yes, for how long?

      Hi EJ!

      I have not tried cooking this recipe on low. I prefer cooking recipes with hash browns and tater tots on high. It might work on low though. If I were to give it a try on low, I would probably cook it from 4-6 hours on low. If you give it a try, let me know how it goes!
