How to Make Taco Hashbrown Casserole in a Slow Cooker
Aunt Lou here.
At the end of last year, I made a Taco Crock Pot Tater Tot Casserole recipe for you guys that was an instant favorite in my family (both at my house and when I shared it with my extended family while we were out in Texas) and with our readers. Your response to that recipe got me thinking of other recipes that will satisfy your palate and be super easy to make. That is how you guys are now seeing this wonderful Taco Crock Pot Hashbrown Casserole! So yummy!
This recipe is a cinch to throw together. Beware though, when your family sees you throwing this recipe together, they are going to go nuts and bug you about how much time is left before dinner until it is dinner time. lol However, you will be the hero of your home when it is time for dinner!
If you area cheese lover, you can always add more cheese to the recipe. In my humble opinion, there is no such thing as too much cheese!
It is in the recipe, but I want to reiterate it here: make sure your country style hashbrowns are still frozen. They will thaw and cook in the crock pot. If you thaw them before you put them in the crock pot, they might be overcooked by the time the cooking time is over.
Psst…wanna make this in your oven? You can find there recipe here.

I added bag of frozen peas and bag of frozen corn…..delicious!!!
In the slow cooker as I’m writing this. Store was completely out of all hashbrowns so I went old school and shredded my own. They weren’t frozen so hopefully they wont turn to mush. I’ll keep an eagle eye on them!
Great job using what you have! How did it turn out?
Aunt Lou
Could dehydrated hashborwns be used I wonder??? Or would they just turn to mush?
Sorry, I haven’t ever cooked with dehydrated hash browns, so I can’t say. If you give it a try, let me know how it goes.
Aunt Lou
Can this be made with fresh grated potatoes?
I haven’t tried this with fresh grated potatoes. If I did, I would watch it very closely to adjust the cooking time as needed. If you give it a try, let me know how it goes!
Aunt Lou
Can I use chicken?
I haven’t tried this with chicken. If I did, I would use chicken that is already cooked and shred it. If you used uncooked chicken, I am afraid the cooking juices from the chicken would add too much liquid to the dish. If you give it a try, let me know how it goes!
Aunt Lou
Awesome
So glad you enjoyed it!
They didn’t have cheddar cheese soup at my store, so I used campbell’s nacho cheese soup instead. Also used 1 cup colby jack and 1 cup taco cheese instead of 2 taco cheeses (figured it would be a lot of taco seasoning with the nacho cheese soup). This turned out delicious! Super easy and doesn’t take long to cook.
Wondering what alternatives could be used to make this dairy free (allergy).
Anyone have any suggestions?
Dairy-free cheese, some plant mylk & possibly a vegan cream soup. That’s where I would start 😌
This recipe is so easy to make and tastes so good
I’m so glad you like this recipe! I agree, it is super yummy!
Need a little more spice, next time I make it I will add a can of Rotel tomatoes.
Sounds like a great addition to this recipe! Let us know how it goes when you give it a try!
I used the nacho cheese soup!
I can’t rate the recipe as I haven’t made it yet LOL. I have a question: I want to try this recipe BUT… I don’t have 30 oz frozen hash browns. Instead I have some 4.2 oz boxes of dehydrated hash browns. Can you tell me how many boxes of dehydrated hash browns should I hydrate to equal the 30 oz frozen hash browns?? Please help me. TIA!
I haven’t ever cooked with the dehydrated hash browns before, but did a little research. The dehydrated hash browns have about 7 servings per carton. The frozen hash browns have about 10 servings per bag, so it looks like it would take about one and a half cartons. Let us know how it goes if you give it a try!
Can this be frozen and reheated?
I haven’t tried freezing and reheating this one. If you give it a try, let me know how it turns out!
Made this the other night. Used some extra hash browns for more servings so I also added a can of Campbell’s Fiesta Nacho Cheese soup. Served it with olives, tomatoes, and sour cream. Will definitely make this again.
Great job making it your own! I’m so glad you enjoyed this recipe!
Tried this yesterday. I have never been much of a cook, but the comments I received from my family made me feel great. Thanks for sharing this recipe!
Made this and instead of adding the last cup of shredded cheese, I added Velveeta cheese sauce and served it with nachos to dip in. Would also be good with nachos crunched on top. Great recipe.
That sounds delicious Tonya!
Hi! I am making this tomorrow and am wondering do I put the hash browns in frozen??
Hi Alexis!
Yes. They should be frozen, but broken apart so there are not big clumps. Enjoy!
Aunt Lou
Any chance you could use the oven start to finish to save time? If so, what would suggest for time and temp?
Sure can! You can find the recipe here: https://www.recipesthatcrock.com/taco-hashbrown-casserole-oven-recipe/. Enjoy!
2nd time I’ve made this in three weeks and only added a small can of chopped green Chili’s and some chopped onion to beef. I like the oven version best because it is very quick and like the browning. We all liked it even the young grandchildren. Thanks for the recipe
Love your additions Wanda! That sounds delicious! I’m so glad you and your family enjoy this recipe. Thank you for taking the time to let us know. We love hearing when our readers enjoy one of our recipes!
Hi! This looks delicious, but is there anyway to get around the canned soup? THANK YOU!!
Hi Leigh!
I haven’t tried this without the cheddar cheese soup. You might try making a thick cheese sauce and adding an equivalent amount. If you give it a try, let me know how it goes!
Aunt Lou
Just out of curiosity, is it supposed to be a little dry? Will it get more moist? Do I need to add water or milk? I’m In the middle of cooking it and it seems a little dry.
Hi Bethany!
It definitely isn’t a soupy casserole, but mine wasn’t dry. I haven’t tried it, but think if you want a more moist casserole, next time you might add in another can of cheddar cheese soup at the beginning. If you give it a try, let me know how it turns out!
Aunt Lou
Do you just it it as is or serve it with something?
Hi Shannon!
We eat it as a meal. If you have some favorite sides to go with a Mexican-style meal, I’m sure they would be a great addition! My kiddos also like to put some in a tortilla and eat it burrito style.
Aunt Lou
Would this work with Beyond Meat instead of hamburger
Hi Linda!
I do not have any experience with Beyond Meat. If you give it a try, let me know how it turns out.
Aunt Lou
i just wonder can use hash brown potatoes, (cubed potatoes)
Hi Tammy!
I haven’t tried it with cubed hashbrowns, but think it could work! Make sure they are still frozen when you put them in so they don’t turn to mush during the cooking time. If you give it a try, let me know how it goes!
~Aunt Lou
Couldn’t find the cheddar soup at the store so was wondering if can of nacho cheese would work?
Hi Brenda,
I haven’t tried this with nacho cheese, but think it could work. If you give it a try, let me know how it goes!
~Aunt Lou
I found a really easy cheddar cheese soup recipe on Pinterest, so I could make this without having to go to the store! Only 10 minutes start to finish!!
I love this recipe! However I only have the cubed hash browns on hand. Will they need to be thawed? Also, can you make this in the casserole crock?
Thank you!
Hi Debbie!
I haven’t tried this with cubed hash browns, but they should work. I would throw them in frozen so they don’t get mushy by the end of cooking. I made this one in the casserole crock. As always when trying a new recipe, watch it closely the first time you make it so you can make adjustments to cooking time as necessary. Also, if your casserole crock is like mine, turn the insert halfway through cooking so the recipe will cook evenly.
Enjoy!
Aunt Lou
Good advice, thanks so much for your reply!
OMG you are wonderful!! I have always enjoyed your recipes, but I just noticed the feature of customizing the number of people you want to prepare the dish for! It may have been there a while and I’m just slow at noticing, but I am positively giddy at finding it! Woo Hoo. Can you tell I’ve been home too long? It doesn’t take much to make me happy. LOL.
