At the end of last year, I made a Taco Crock Pot Tater Tot Casserole recipe for you guys that was an instant favorite in my family (both at my house and when I shared it with my extended family while we were out in Texas) and with our readers. Your response to that recipe got me thinking of other recipes that will satisfy your palate and be super easy to make. That is how you guys are now seeing this wonderful Taco Crock Pot Hashbrown Casserole! So yummy!

This recipe is a cinch to throw together. Beware though, when your family sees you throwing this recipe together, they are going to go nuts and bug you about how much time is left before dinner until it is dinner time. lol However, you will be the hero of your home when it is time for dinner!

If you area cheese lover, you can always add more cheese to the recipe. In my humble opinion, there is no such thing as too much cheese!

It is in the recipe, but I want to reiterate it here: make sure your country style hashbrowns are still frozen. They will thaw and cook in the crock pot. If you thaw them before you put them in the crock pot, they might be overcooked by the time the cooking time is over.

Ingredients

  • 1 lb ground beef
  • 2 cloves garlic minced
  • 1 oz packet taco seasoning
  • 10.5 oz cheddar cheese soup
  • 30 oz frozen shredded hashbrowns
  • 2 cups shredded taco style cheese divided

Instructions

  • Brown your ground beef with garlic and drain
  • In a large bowl, mix all ingredients together, except for 1 cup of shredded cheese and pour into lightly greased 6-quart crock pot or casserole crock pot
  • Top all the ingredients with your remaining cheese
  • Cover and cook on low for 4-5 hours or high for 2-2.5 hours
  • If desired and using a oven safe crock, place in broiler on high for approximately 90 seconds to brown cheese on top

  2. In the slow cooker as I’m writing this. Store was completely out of all hashbrowns so I went old school and shredded my own. They weren’t frozen so hopefully they wont turn to mush. I’ll keep an eagle eye on them!

      I haven’t tried this with chicken. If I did, I would use chicken that is already cooked and shred it. If you used uncooked chicken, I am afraid the cooking juices from the chicken would add too much liquid to the dish. If you give it a try, let me know how it goes!

    They didnโ€™t have cheddar cheese soup at my store, so I used campbellโ€™s nacho cheese soup instead. Also used 1 cup colby jack and 1 cup taco cheese instead of 2 taco cheeses (figured it would be a lot of taco seasoning with the nacho cheese soup). This turned out delicious! Super easy and doesnโ€™t take long to cook.

  6. Wondering what alternatives could be used to make this dairy free (allergy).
    Anyone have any suggestions?

    1. Dairy-free cheese, some plant mylk & possibly a vegan cream soup. That’s where I would start ๐Ÿ˜Œ

    I can’t rate the recipe as I haven’t made it yet LOL. I have a question: I want to try this recipe BUT… I don’t have 30 oz frozen hash browns. Instead I have some 4.2 oz boxes of dehydrated hash browns. Can you tell me how many boxes of dehydrated hash browns should I hydrate to equal the 30 oz frozen hash browns?? Please help me. TIA!

      I haven’t ever cooked with the dehydrated hash browns before, but did a little research. The dehydrated hash browns have about 7 servings per carton. The frozen hash browns have about 10 servings per bag, so it looks like it would take about one and a half cartons. Let us know how it goes if you give it a try!

  11. Made this the other night. Used some extra hash browns for more servings so I also added a can of Campbell’s Fiesta Nacho Cheese soup. Served it with olives, tomatoes, and sour cream. Will definitely make this again.

  12. Made this and instead of adding the last cup of shredded cheese, I added Velveeta cheese sauce and served it with nachos to dip in. Would also be good with nachos crunched on top. Great recipe.

      Yes. They should be frozen, but broken apart so there are not big clumps. Enjoy!

    2nd time Iโ€™ve made this in three weeks and only added a small can of chopped green Chiliโ€™s and some chopped onion to beef. I like the oven version best because it is very quick and like the browning. We all liked it even the young grandchildren. Thanks for the recipe

    Just out of curiosity, is it supposed to be a little dry? Will it get more moist? Do I need to add water or milk? Iโ€™m In the middle of cooking it and it seems a little dry.

      It definitely isn’t a soupy casserole, but mine wasn’t dry. I haven’t tried it, but think if you want a more moist casserole, next time you might add in another can of cheddar cheese soup at the beginning. If you give it a try, let me know how it turns out!

      I haven’t tried this with cubed hash browns, but they should work. I would throw them in frozen so they don’t get mushy by the end of cooking. I made this one in the casserole crock. As always when trying a new recipe, watch it closely the first time you make it so you can make adjustments to cooking time as necessary. Also, if your casserole crock is like mine, turn the insert halfway through cooking so the recipe will cook evenly.

  22. OMG you are wonderful!! I have always enjoyed your recipes, but I just noticed the feature of customizing the number of people you want to prepare the dish for!
