Let me just start out by saying, I LOVE this recipe. We have had it several times and every time my family goes crazy over it. Mikey calls it the “kitchen sink” casserole because it has all kinds of yummy ingredients in it! This recipe was born after I found a similar recipe in Gooseberry Patch’s 150 Recipes in a 13 x 9 Pan and just knew with a few tweaks this would be a fantastic slow cooker recipe!
This recipe also gave me a great opportunity to test out a new silicone slow cooker liner I bought on Amazon thanks to a Crock Posse member (our YouTube community) suggestion. The “baked” on cheese and rice gave me the perfect chance to see if this liner could help me avoid soaking and scrubbing my ceramic slow cooker. The result? I loved it!! It kept the cheese from sticking and it washed right off in the dishwasher. I can see us using it a LOT in the future.
Crock Pot Sweet Corn Sausage Rice Casserole Recipe

Ingredients for Crock Pot Sweet Corn Sausage Rice Casserole Recipe
1 lb ground sausage
1 green bell pepper chopped
1 sweet onion chopped
10 oz diced tomatoes with green chilies (mild)
8 oz Mexican Velveeta diced
15 oz creamed corn
11 oz Mexicorn
11 oz corn
3 cups minute rice uncooked (plus water to prepare)
salt and pepper to taste
2 cups shredded cheddar cheese
How to Make Sweet Corn Sausage Rice Casserole in a Slow Cooker

Prepare rice according to package and set aside.

In a skillet or browning slow cooker, brown sausage until cooked through, drain and return to the skillet.

Add the green bell pepper and onion to the skillet and cook for 2-3 minutes.

Stir in the tomatoes and Velveeta until cheese melts.

In a large bowl combine skillet contents with rice, cream style corn, corn, Mexicorn, salt and pepper and mix well.

Spray a 6-quart slow cooker (or Casserole Crock) with non-stick cooking spray or use a slow cooker liner (We used this reusable one).

Add mixture to slow cooker and top with shredded cheese.

Cook on low for 2 to 3 hours until cheese melts and edges brown slightly.

- We have made this recipe several times in a browning slow cooker, casserole crock and also in one of our regular 6 quart slow cookers with a reusable liner. Any 6 quart slow cooker should work fine.
- As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
- All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.

This is so tasty and makes a lot. We first ate with salad and tortilla chips….then another night we ate as a tortilla filling. It cooked well, looked nice. I substituted instant brown rice. Next time I think I’ll add a little more sausage. I sure love using my crock pots!
Hi Cris, Absolutely LOVE your recipes and have made quite a few. I want to try this one soon. It calls for 1 lb ground sausage. Is that roll pork breakfast sausage or ground Italian sausage. Want to be sure.

Can I use regular rice which I prefer? Is it still the same amount, uncooked? It sounds delicious.

The first step of the recipe is to prepare the rice, so if you would prefer long cooking rice, just prepare it ahead of time and use it instead of the minute rice. Enjoy!
Silly question but do you drain the corn and mexicorn? Or just dump that stuff in there

I did not drain. The 11 oz cans I used had very little liquid anyhow. Enjoy!
OMG! Thank you for including the link for the crock pot liner! It’s been tough trying to fit our big crock pot under the faucet in our new apartment… I always seem to miss a couple of spots. Of course, that could just be my old eyes trying to find stuff on that black surface (LOL).

Just a little confused! Do we cook the rice first (it says water to prepare) or do we add the water with the uncooked rice and the other ingredients? Sorry if this is a lame question!!

Not a lame question at all. Step one of the recipe is to prepare the rice according to the package. We listed the measure of uncooked rice because some folks get confused with the cooked measure. So we just made the first step of the recipe to cook the rice according to the package. Hope that helps!
