This Cajun Crock Pot Chicken for Two recipe is so simple to throw together and tastes amazing. I decided to switch this up a bit from the original by shredding the chicken and serving it over rice. The results were amazing! My entire family loved it.
I tried this recipe out in different slow cookers. What I found was that my standard 2-4 quart slow cooker cooked with about the same timing. However, when I used my 2.5 Quart Small Casserole Crock Pot, it took about 30 minutes longer when cooking on high. That would translate to around an hour longer when cooking on low. For that reason, I did not put the small casserole crock pot in the list of recommended slow cookers. While all slow cookers cook differently, there was a big difference on this one from the others. So, you can use the small casserole crock pot, keep in mind that it will take longer.

What You Will Need for Cajun Crock Pot Chicken for Two
Ingredients Needed
- 1/2 lb boneless, skinless chicken thighs (If you prefer white meat, you can use a half pound boneless, skinless chicken breast cut into thigh size pieces.)
- 1/2 cup cream of chicken soup
- 1 1/2 teaspoons ranch dip mix
- 3/4 teaspoon Cajun seasoning
- White rice, prepared
Equipment Needed
- Can opener
- Measuring cup
- Measuring spoons
- Small mixing bowl
- Stirring spatula
- 2 Quart Slow Cooker, 3 Quart Slow Cooker OR 4 Quart Slow Cooker
- Two forks
- Whatever you need to prepare your favorite rice
Time Needed
- Prep Time: 5 minutes or less
- Cooking Time: 2 hour to 2 hours and 30 minutes on low or 1 hour to 1 hour and 15 minutes on high, rotating your insert halfway through cooking if your slow cooker does not cook evenly

Cajun Crock Pot Chicken for Two
Ingredients
- 1/2 lb boneless, skinless chicken thighs (or boneless, skinless chicken breasts cut into thigh size pieces), trimmed
- 1/2 cup canned cream of chicken soup
- 1 1/2 teaspoons ranch dip mix
- 3/4 teaspoon Cajun seasoning
- white rice prepared
Instructions
- Put 1/2 lb boneless, skinless chicken thighs in a 2.5 Quart Crock Pot, 2.5 Quart Small Casserole Crock Pot, 3 Quart Crock Pot OR 4 Quart Crock Pot.
- In a small mixing bowl, mix together 1/2 cup canned cream of chicken soup, 1 1/2 teaspoons ranch dip mix and 3/4 teaspoon Cajun seasoning until well blended.
- Spread seasoning mixture over the top of your chicken.
- Cover and cook on low for 2-2.5 hours or high for 1 hour -1 hour and 15 minutes.
- Prepare your white rice towards the end of your cooking time.
- Shred chicken with two forks and stir everything together before serving chicken on a bed of rice with sauce spooned over top.
