The Low Carb Saucy Crock Pot Chicken recipe I made last fall instantly became a family favorite. It is perfect for families that have members who eat low carb and members who do not. While this Saucy Crock Pot Chicken and Rice is not low carb, you do not add the rice until the end. So you can easily pull some chicken and sauce out before adding the rice for any low carb people at your table!

I love how quickly this recipe comes together. You can easily mix together your sauce while your chicken is browning on the stove. I am notoriously slow when it comes to prepping a recipe (ironic right?) and can still get this recipe ready to go in 10 minutes! Easy peasy!

What You Will Need

Ingredients Needed

  • 2ย lbsย Chicken Tenders
  • 1/2ย cupย butter,ย divided
  • 1ย tablespoonย garlic powder
  • 2ย teaspoonsย garlic salt
  • 1ย teaspoonย onion powder
  • 1ย teaspoonย parsley flakes
  • 1ย teaspoonย dried cilantro leaves
  • 1/2ย teaspoonย pepper
  • 1/4ย teaspoonย ground red pepper
  • 1ย cupย heavy whipping cream
  • 1.5ย cupsย Shredded Parmesan
  • 8ย ozย cream cheese,ย softened
  • 2 cups raw rice, prepared

Equipment Needed

  • Skillet
  • Tongs
  • Butter knife
  • Cutting board
  • Measuring spoons
  • Measuring cups
  • Medium/large bowl and hand mixer or stand mixer
  • Stirring spatula
  • Large bowl
  • 4 quart slow cooker

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 4 hours on low or 2 hours on high, stirring halfway through or sooner if your unit cooks hot

  • Melt 2 tablespoons of butter in a skillet over medium/high heat.
  • Brown all of your chicken tenders, about 3 minutes on each side.
  • Place your browned chicken tenders in a 4 quart slow cooker, pouring the remaining butter/cooking juices over top.
  • Using a mixer, combine your remaining ingredients, except for your rice, and spoon over the top of your chicken
  • Cover and cook on low for 4 hours or high for 2 hours, stirring halfway through or sooner if your unit cooks hot
  • About a half hour before serving, stir in your prepared rice

    Curious? Can you prepare this, freeze it, and dethaw it just fine?

      I’m so glad you enjoy this recipe! I haven’t tried freezing the chicken and sauce for later, but think it might work. I wouldn’t try freezing the rice though but would just make fresh rice when I thawed out the chicken and sauce. If you give it a try, let me know how it goes!
