How to Make Low Carb Creamy Cajun Chicken in a Crock Pot

We absolutely loved the Slow Cooker Cajun Chicken I first made a while back. I love taking a favorite recipe of ours and changing it up to give it new life. Adding cream cheese to some of our other favorites have been huge hits, so I thought I would try it with this Low Carb Crock Pot Creamy Cajun Chicken, and I am sure glad I did! Yum!
This is labeled low carb, because the net carbs are low carb. If you are comfortable using canned soups and mixes in your low carb diet, the net carbs in this dish are low in carbs. If you are not comfortable doing so, that’s okay. We understand every recipe isn’t for every person. If you are not a person who usually eats low carb, this recipe is still for you. As you know, I am known as the Carb Queen or Sugar Princess around here. I love this recipe, as does my entire family from my 6 year old to my husband! I am sure you will love it too!
What You Will Need
Ingredients Needed
- 2 lbs boneless, skinless chicken breasts
- 10.75 oz can cream of chicken soup
- 1 oz pkg ranch salad dressing mix
- 1 tablespoon cajun seasoning
- 8 oz cream cheese, softened
Equipment Needed
- Small mixing bowl and hand mixer or stand mixer
- Measuring spoon
- Can opener
- Stirring spatula
- 4 quart crock pot
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high

Low Carb Crock Pot Creamy Cajun Chicken
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 10.75 oz can cream of chicken soup
- 1 oz pkg ranch salad dressing mix
- 1 tablespoon cajun seasoning
- 8 oz cream cheese softened
Instructions
- Spray your 4-quart crock pot with cooking spray.
- Put your chicken in your crock pot.
- In a separate bowl, mix together your remaining ingredients with a mixer until well combined.
- Spoon seasoning mixture over the top of your chicken.
- Cover and cook on low for 4-6 hours or high for 2-3 hours

I haven’t tried this recipe in the smaller casserole crock. My concern would be everything fitting in the 2.5 quart casserole crock pot. You will want to make sure that the crock pot isn’t more than three quarters full. If you give it a try, let me know how it goes!

I haven’t tried this with boneless, skinless thighs, but they should work just fine. The cooking time might be a little less since the size of the pieces of meat are smaller. Just watch it closely the first time you make it to adjust the cooking time as needed! Let me know how it goes if you give it a try.

I see where the recipe calls for a 4 quart crock pot and I was wondering if this would work in a 6 quart crock pot? I love yall and have made and served many of your recipes. Thank you for just being you!

I haven’t tried this in a 6 quart, but it should work. It will change the cooking time some, so make sure you watch it closely the first time you make it to adjust the cooking time as needed. Enjoy!
