Notes on Slow Cooker Bacon Cheddar Chicken
- This is a revisit of our tried and true Crock Pot Bacon Cheddar Chicken recipe. You can find the oven version of this recipe here: Bacon Cheddar Chicken Casserole
- We made this recipe in our Casserole Crock but you can make it in a 6 quart traditional crock pot.
- We used boneless skinless chicken thighs but you could use chicken breasts or chicken tenders. Cooking times may vary.
- This recipe works best if your cream cheese is VERY soft to mix with the other ingredients. If it isn’t soft, pop it in the microwave for 30 sec to make it nice and creamy to mix in.
- We serve this with a slotted spoon or slotted spatula

Slow Cooker Bacon Cheddar Chicken (Low Carb)
Ingredients
- 3 lbs boneless skinless chicken we prefer thighs
- salt & pepper to taste
- 1/2 cup mayo
- 8 oz cream cheese very soft
- 2 cups shredded cheddar cheese divided
- 8 slices crisp bacon crumbled, divided
- 3 green onions chopped, divided
Instructions
- Place chicken in the bottom of your slow cooker.
- Season with salt and pepper.
- Combine mayo and cream cheese in a bowl until smooth.
- Smother mixture over the chicken chicken
- Mix half of the onions, half of the cheese and half of the bacon and sprinkle over top of chicken.
- Cook low 4-4.5 hrs
- Sprinkle rest of bacon onions and cheese over top.
- Serve with slotted spoon or slotted spatula.
