How to Make Low Carb Bacon Broccoli Chicken in a Casserole Crock

As I am revisiting some of our Tried and True recipes to highlight them for you guys, I knew we would have to re-share our original Crock Pot Bacon Broccoli Chicken.
We used chicken tenders in that recipe, but we also love it with boneless skinless chicken thighs, so we decided to share the thigh version with you today.

Notes on This Recipe
- We used our casserole crock to make this low carb one pot dish. We love how it evenly cooks and makes dividing into portions a snap!
- We used thighs in this recipe, but you can use other cuts of chicken and adjust cooking times. Here is our original recipe using chicken breast tenders.
- If you desire a smoother sauce, whip cream cheese with dip mix in a mixer. Then slather on top instead of step 2 and 3. I prefer the convenience of not getting mixer out and find that mixing at the end is good enough for me.

Slow Cooker Bacon Broccoli Chicken (Low Carb)
Ingredients
- 3 lbs Boneless Skinless Chicken Thighs
- 16 oz Frozen Broccoli florets
- 8 oz Cream Cheese cubed
- 1 oz envelope Hidden Valley Chive Onion Dip Mix (Can use Ranch Dip Mix as substitute)
- 1/4 cup Butter cubed
- 6-8 slices Havarti Cheese
- 8 slices Crisp Bacon crumbled
- 2 Green Onions chopped (green parts only)
Instructions
- Place thighs and broccoli (frozen) in bottom of a casserole crock or 6 quart slow cooker.
- Season with dip mix and sprinkle with butter cubes.
- Dot with cream cheese.
- Cover and cook on low for 4-5 hours or until the thighs are cooked through.
- Stir to break up the cream cheese (See note if you desire a smoother butter sauce.)
- Place cheese slices evenly over top of chicken and broccoli, overlapping if needed.
- Sprinkle with bacon and onions.
- Cover until cheese melts.
- Serve in a bowl.

We haven’t tried this with fresh, uncooked broccoli, but think it could work. If you give it a try, let us know how it goes!
I made this in a 4-quart crock pot this weekend with 3 large chicken breasts w/ribs, deboned, and breast meat cut in bite-size pieces. It came out wonderful. I had my friend over for lunch yesterday and she and I both said “mushrooms.” So will add some mushrooms next time. This is REALLY good. Only 1 serving left, so got 5-6 good-sized servings out of the 4-quart slow cooker. It took 5 hours on low, except at the end when I added the Harvarti cheese, bacon and green onions, when I then put it on high for 5 minutes or so to get cheese to melt.

I will post and let you know. I’m thinking of maybe cutting up the raw breasts into bite size pieces before putting in bottom of crockpot to aid in cooking through and through. A friend of mine suggested slow cooking maybe an hour longer if using whole breats to ensure they’re cooked. I haven’t gotten around to doing this yet, but will will probably this weekend.
I want to try the Bacon Broccoli Chicken. My slow cooker is a 4 quart. I’d like to substitute boneless, skinless chicken breast, so how many do you think would work? I’m thinking 3 but I wanted to get your opinion.
