How to Make Bacon Cheddar Chicken in a Slow Cooker

This is one of those recipes that my family requests on a regular basis. It isn’t a pretty dish, but the flavor is SO good. It is one of our favorite low carb chicken recipes that everyone loves– low carb diet or not! Everyone always fights over the leftovers. It is such a family favorite, I think I am going to bring it as a low carb dish to some upcoming holiday potlucks.
Crock Pot Bacon Cheddar Chicken (Low Carb) Notes:
- We love using our casserole crock to make this dish. It does a great job of getting all the yummy topping evenly over all of the chicken. However, you can easily make this dish in a traditional 6 quart slow cooker if you don’t have a casserole crock.
- This recipe works best if your cream cheese is VERY soft to mix with the other ingredients. If it isn’t soft, pop it in the microwave for 30 sec to make it nice and creamy to mix in.

Crock Pot Bacon Cheddar Chicken Recipe (Low Carb)
Crock Pot Bacon Cheddar Chicken
Ingredients
- 3 lbs boneless skinless chicken we prefer thighs
- salt & pepper to taste
- 1/2 cup mayo
- 8 oz cream cheese very soft
- 2 cups shredded cheddar cheese divided
- 8 slices crisp bacon crumbled, divided
- 3 green onions chopped, divided
Instructions
- Place chicken in the bottom of your slow cooker.
- Season with salt and pepper.
- Combine mayo and cream cheese in a bowl until smooth.
- Mix half of the onions, half of the cheese and half of the bacon.
- Smother mixture over the chicken chicken
- Sprinkle rest of bacon onions and cheese over top.
- Cook low 4-4.5 hrs
- Serve with slotted spoon or slotted spatula.

When you show the Nutritional value of a recipe, is it based on per serving? Sometimes the values seem a bit high. Thanks.

The short answer is yes. However, those calculations are automatically generated through a nutritional calculator that is FAR from perfect and at best a very general estimation that could be VERY different than what you eat at home. We put a disclaimer on every post that those calculations should not be used for specific dietary needs. Home cooking nutrition calculations are MUCH different than those you find in restaurants because restaurants know the exact ingredients being used (and they have paid staff to figure out nutritional information). Recipe ingredients vary so much in nutritional content I always recommend that folks calculate their own nutritional info as they make a dish. As someone who personally needs to calculate dietary needs, I never trust online calculations even on my own site. Site owners are doing their best, but what is correct for one home cook will be extremely incorrect for another. It is very frustrating. We put it on the site because folks ask for it (even with all the disclaimers) and google recommends we have it on our sites. However, I always fear it can be misleading, hence the disclaimers.
My husband and three kids asked me to make this recipe again and double batch next time!

This is in my crockpot right now and I have had to threaten the kids to stay out of it. I did add red peppers just because we love peppers. The house smells wonderful. All the recipes we’ve used from your site have been hits pretty sure your batting 100

Hi, I love the concept of your low carb slow cooker meals, but my only problem is that you don’t include the carb counts of your meals. I’m finding it difficult to fit your wonderful looking meals into my diet without the counts. Can you please help? Calories, carbs, and protein counts would be great for all your slow cooker meals.

We don’t provide nutritional information because we feel it is incredibly misleading for recipes on the internet. Nutritional information will be different for every home cook because it always will depend on the exact ingredients and products you use. We wrote a post about it a while back and compared products to show how vastly different simply based on different brands of the same ingredients (https://www.recipesthatcrock.com/frequently-asked-questions-nutritional-information/ ).
Since writing that post we began eating Low Carb in our home and readers asked we share the low carb recipes we enjoy at home. When something is marked low carb on the site it is because we make it using low carb ingredients and enjoy it as a part of our low carb lifestyle. At first I tried to share net carbs, but as I began to learn how much products varied in carb counts specifically, I began to be worried that information could be incredibly misleading so I stopped.
I know that is probably not the answer you were hoping for, but after a lot of consideration we have decided to not include it at this time.
