I just love coming up with low carb dishes that the carb lovers in my life enjoy. My family LOVES spinach artichoke dip. We order it at restaurants, make it at home and enjoy it in various ways… so I got to thinking, why not make a creamy chicken dish that uses those same flavors?! After a couple tries, this Crock Pot Spinach Artichoke Chicken recipe was born!
Crock Pot Spinach Artichoke Chicken (Low Carb) Notes
- We liked to use our casserole crock for recipes like this. However, if you don’t have a casserole crock, you can use a traditional 6 quart slow cooker.
- This recipe works best if your cream cheese is VERY soft to mix with the other ingredients. If it isn’t soft, pop it in the microwave for 30 sec to make it nice and creamy to mix in.

Crock Pot Spinach Artichoke Chicken (Low Carb) Recipe
Crock Pot Spinach Artichoke Chicken (Low Carb)
Ingredients
- 16 oz Cream Cheese softened
- 9 oz Frozen Spinach cooked and drained well
- 14.5 oz Artichoke Hearts chopped
- 1 tablespoon garlic
- 2 cups shredded mozzarella
- 3 lbs boneless, skinless chicken (we used thighs)
- salt and pepper to taste
Instructions
- Place the chicken in the bottom of a casserole crock or traditional 6 quart slow cooker.
- Salt and Pepper well.
- In a bowl, mix together cream cheese, spinach, artichokes, garlic and season with salt and pepper.
- Stir in mozzarella cheese.
- Cook on low for 4-5 hours

You can also use a 6 quart slow cooker. Enjoy!
Try as I might, I can’t find any serving suggestions… should this be put on a bun like pulled chicken, or served over rice, or some other method? Thank you, it looks amazing…
We just served it as a main dish with whatever side dishes we are in the mood for at the time. We haven’t tried serving this over rice or on a bun. If you give that a try, let us know how it goes!
Can you freeze this
We haven’t tried freezing this recipe. I’m not sure it would hold up well with cooking, re-freezing and warming up. If you give it a try, let us know how it turns out.
