How to Make 7 Can Vegetable Soup in a Crock Pot

As you may already know, I am in the running for the title of World’s Slowest Recipe Prepper (is prepper a word? lol). So, when I hear of a recipe that is super easy to prep, I am all for it! You can actually thank Michael for this yummy recipe. Before we met, he said he made this 7 Can Crock Pot Vegetable Soup all the time. My only complaint is that it took him almost eleven years to tell me about it! Come on man! You gotta share a jewel of a recipe when you have one!
If you want to take the cooking time of this recipe down even more, you can use our Crock Pot Make Ahead Ground Beef. That will make throwing this together even easier if you want to put it together before you leave for work in the morning! While you are going about your day, your crock pot will meld all those flavors together to give you a delicious, hearty soup for dinner!
What You Will Need
Ingredients Needed
- 2 lbs ground beef, browned and drained
- 64 oz vegetable juice
- 14.5 oz can beef broth
- 15.25 oz can corn, drained
- 14.5 oz can green beans, drained
- 15 oz can peas, drained
- 14.5 oz can carrots, drained
- 15 oz can sliced potatoes, drained
- 14.5 oz can diced tomatoes, drained
- 1 small onion, chopped
- 1 tablespoon dried basil
- 1 1/2 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
Equipment Needed
- Skillet and strainer or micro cooker
- Can opener
- Can strainer (optional)
- Measuring spoons
- Wooden spoon
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high

7 Can Crock Pot Vegetable Soup
Ingredients
- 2 lbs ground beef browned and drained
- 64 oz vegetable juice
- 14.5 oz can beef broth
- 15.25 oz can corn drained
- 14.5 oz can green beans drained
- 15 oz can peas drained
- 14.5 oz can sliced carrots drained
- 15 oz can sliced potatoes drained
- 14.5 oz can diced tomatoes drained
- 1 small onion chopped
- 1 tablespoon dried basil
- 1 1/2 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
Instructions
- Put all your ingredients in a 6 quart slow cooker and stir until well combined
- Cover and cook on low for 6-8 hours or high for 3-4 hours

Absolutely delicious!
My vegetable soup that we just finished off is very similar to yours! My difference is, I don’t drain my cans of vegetables, so that would cut out one less can being the broth unless just want it, plus I use can of diced tomatoes seasoned with basil and oregano, which is plenty of seasoning other than salt and pepper, I add couple squirts of ketchup and a small can of tomato sauce, and I add a can of kidney beans and rinse the can with a little bit of water, and cut up a zucchini in it too. Sometimes I add the meat, sometimes not, It’s wonderful soup!

I have this soup in my crock right now and it looks delicious. I made just a few adjustments, I sauteed the onions and used minced garlic instead of garlic salt. I used 1/2 tsp thyme, 2 bay leaves, 1 tablespoon basil, 1 tsp celery salt. I used diced potatoes instead of sliced. I hate it when people rate recipes before they make them but I am pretty sure I am going to love this. Keep the great recipes coming Aunt Lou!

I have made this twice now- left out the carrots because I don’t like them and add lima beans and a can of Rotel. I also sprinkled in some Paprika and red pepper to give it a little more flavor. It has been a hit both times. One of my co-workers is beginning her fight with cancer, so I am making another batch for her for the freezer for future meals.

I haven’t tried freezing this specific recipe, but have had success freezing other vegetable soups, so it might work. If you give it a try, let me know how it goes!
I have been making my stew like this but I use frozen vegetables & I save left over meat cut up & put it in. My step dad made it with rabbit meat & chicken & beef & homecanned vegetables. Will making some soon.

I love slow cooker recipes, but here’s a question with this 7 can crock pot veggie soup recipe. Does the 64 oz of vegetable juice include the liquids drained from the canned veggies, or is all of it 64 oz of something like V8? The soup sounds really good. Looking forward to having it. Thanks.
The 64 oz vegetable juice is a 64 oz jug of vegetable juice, like V8’s vegetable juice. You can just drain the liquid from your cans of vegetables in the sink. Enjoy!

This recipe looks fabulous, but… if the first ingredient is ground beef how can it be vegetable soup? Isn’t it beef and vegetable? Or vegetable and beef, whatever.
