How to Make Electric Pressure Cooker Shredded Chicken in a Ninja Foodi
Cris here. I love to make ahead chicken for easy sandwiches, salads, soups and casseroles. Most of the time I make our Crock Pot Butter Chicken or our Electric Pressure Cooker Chicken. Both of those recipes use boneless skinless chicken (we prefer thighs).
However, lately it has been difficult to always find boneless skinless chicken. So I decided to try this recipe with bone-in chicken and do a little something special with the leftover skin… make delicious crispy Chicken Cracklins using the air crisp basket in my Ninja Foodi! I also kept the delicious leftover broth as a broth base to use in soups and pasta dishes. This is the recipe that just keeps giving!

- If you are looking for a recipe that uses boneless skinless chicken, check out our Electric Pressure Cooker Chicken or our Crock Pot Butter Chicken.
- In this recipe, we use bone-in thighs because we enjoy dark meat. You can try this recipe with other cuts of chicken, you may just need to adjust cooking times.
- We cook this chicken under high pressure for 30 minutes because we want fall off the bone chicken that is super easy to shred. If you want your chicken to be less tender, reduce cooking times to 25 minutes.

- We’ve tested this recipe in a 6 quart Instant Pot and 6.5 quart Ninja Foodi. When pressure cooking with larger pressure cookers, you may need to add 1/2 cup to 1 cup more liquid to reach pressure. Make sure not to overfill smaller pressure cookers past their max lines.

Ninja Foodi Make Ahead Chicken (Electric Pressure Cooker Chicken -Low Carb)
Ingredients
- 5 lbs Bone-in Chicken Thighs Frozen
- 1 stick Butter
- 1 cup Chicken Broth
- Salt & Pepper to taste
- Garlic Powder to taste
Instructions
- Place chicken in 6 or 6.5 quart Electric Pressure Cooker and add remaining ingredients.
- Set lid to seal and cook under high pressure for 30 minutes.
- Quick release pressure and carefully move chicken pieces into a bowl to remove skin (reserve for crackins if desired.) and chicken bone (discard). Shred meat.
- Store in an air tight container with a little broth spooned over the top to use in sandwiches, salads, casseroles and soups.
- Reserve remaining broth as a broth base for soups if desired.

Using Your Make Ahead Chicken Broth Base
You can use the leftover broth from this recipe as a base for soups, recipe ingredient or to boil pasta. This base is a flavorful buttery broth that adds extra flavor.
- Strain this broth using a colander, if desired.
- Add additional regular broth to this buttery broth to make as much as you need for your recipe.
