I just love this recipe and make it ALL the time. It is simple to throw together with ingredients I always have in the fridge. It is an easy way to keep shredded chicken on hand to make a super easy lunch on its own or throw in a casserole for dinner. I sometimes double up this recipe and cook it a bit longer to make chicken to keep in the freezer. Which is tough to do because I am not the only one that loves it! My family calls dibs on the leftovers. In fact, Aunt Lou was up today and she made it a point to tell me to tell all of you that non-low carbers love it to… it is just that plain GOOD.
This is literally one of those dump and go recipes. You just toss all of your ingredients into your slow cooker and cook it until it is tender. Then shred your meat and return it to juices. Perfection in a pot.
Notes on Crock Pot Butter Chicken (Low Carb)
- This is NOT a copycat recipe of the takeout favorite that goes by the same name. This is simply called butter chicken because it is literally chicken cooked in butter.
- We like to use boneless skinless thighs in this recipe, but you can use breasts if you prefer. They may cook faster, so make sure to keep an eye on them the first time and check for when the chicken is easily pulled apart with two forks. If it is hard to pull apart it needs to cook longer. However, do not cook breasts too long or they will become dry and chalky.
- The broth from this chicken makes incredible soups.
- We like to eat this chicken on its own as a main or in casseroles, sandwiches, wraps, salads or tacos.

Crock Pot Butter Chicken (Low Carb)
Ingredients
- 2.5 lbs boneless skinless chicken (we prefer thighs)
- 4 tablespoons butter
- 1/2 cup chicken broth
- salt and pepper to taste
Instructions
- Place all ingredients in a 4-6 quart slow cooker.
- Cook on low for 4-5 hours or until chicken easily shreds with a fork.
- Remove chicken from slow cooker and shred with two forks or in a stand mixer.
- Return to juices to serve.
