How to Make Crock Pot Cheesy Chicken Cabbage Casserole (Low Carb)

As you guys know, my family has been eating low carb for quite sometime now, so I am always on the lookout for another great recipe and if it is a one pot meal, that is even better! This Crock Pot Cheesy Chicken Cabbage Casserole recipe was inspired by the Turkey Tetrazzini recipe found in a great low carb cookbook called Keto Comfort Foods. I altered it to use our Crock Pot Butter Chicken as the cooked poultry in the dish and converted the recipe to cook in my slow cooker.
The family loved this recipe. It will definitely be a dish we will make again.
Crock Pot Cheesy Chicken Cabbage Casserole (Low Carb) Notes:
- This recipe was inspired by the Turkey Tetrazzini recipe in a great low carb cookbook called Keto Comfort Foods.
- We used our Crock Pot Butter Chicken as the cooked chicken for this recipe.
- You can shred your own cabbage or buy the angel shredded cabbage in the salad aisle at the grocery store. Regardless, you will want your cabbage to be thinly shredded.
- We like to use our 6 quart Ninja Slow Cooker to prepare this meal to make it a true one pot meal. We can saute the veggies in the pot on the browning setting and then turn it to slow cook the meal. If you don’t have a browning slow cooker, you can saute your veggies on the stove and then slow cook in any 6 quart slow cooker.

Crock Pot Cheesy Chicken Cabbage Casserole Recipe (Low Carb) Recipe
Crock Pot Cheesy Chicken Cabbage Casserole (Low Carb)
Ingredients
- 2 tablespoons butter
- 2 tablespoons dried minced onion
- 1 tablespoon minced garlic
- 1 cup sliced mushrooms
- 4 cups thinly sliced cabbage
- 2 cups shredded cheddar divided
- 1/2 cup shredded parmesan
- 3 cups cooked chicken shredded
- 1/2 cup chicken broth
- 1 egg beaten
- 1 teaspoon poultry seasoning
- salt and pepper to taste
- 4 oz cream cheese cubed
- Garnish: Chopped Parsley
Instructions
- Saute mushrooms in butter, onion and garlic.
- Combine with cabbage, 1 1/2 cups of the cheddar, parmesan, broth, chicken, egg, poultry seasoning, salt and pepper. Mix well and place in a 6 quart slow cooker.
- Top with cream cheese and remaining cheddar cheese.
- Cook on High for 2-3 hours or Low for 4-5 hour OR until cabbage is tender.

My boyfriend works at John Soule, and I’m constantly trying to figure out how to use up the 20 lbs of cooked chicken he brings home on Fridays. This was an absolute win! I had everything it called for and it was delicious! I did use a whole minced onion in place of the dry onion, and seasoned with a little Montreal steak seasoning, but it’s definitely going in the rotation!

Do I have to pre-cook the chicken? Or can I just throw it in raw, since it will be cooking for 4-5 hours anyway?

We have only tried this recipe with cooked, shredded chicken. If you try it with raw thicken, make sure you check it with a meat thermometer prior to eating. If you give it a try, let us know how it goes!

Looked like a potato but then seen it must be a mushroom. I wanted to add potato but my wife wouldnt let me lol TASTING IT RIGHT NOW. YEP TASTY AS IT LOOKED.just used left overs of cabbage from making cabbage rolls .Great recipe its a keeper STILL WILL TRY WITH TATERS LOL

As I mentioned below, I have been very reluctant to add nutritional information because I feel like it can be very misleading, particularly for folks counting carbs. The best online nutritional info will always be an estimate and can still be VERY different from what you make at home because products can vary so greatly. I always recommend that my readers calculate info themselves based on the products they actually use.
Anything labeled low carb on our site is marked that way because it is something we enjoy (using the lowest carb ingredients we can find) as a part of our low carb lifestyle.
However, we are slowly going through our recipes and adding an automated nutritional information because so many folks are asking for it. We will bump this one up on the list and try to get it updated this week.

We don’t provide nutritional information because we feel it is incredibly misleading for recipes on the internet. Nutritional information will be different for every home cook because it always will depend on the exact ingredients and products you use. Since writing that post we began eating Low Carb in our home and readers asked we share the low carb recipes we enjoy at home. When something is marked low carb on the site it is because we make it using low carb ingredients and enjoy it as a part of our low carb lifestyle. At first I tried to share net carbs, but as I began to learn how much products varied in carb counts specifically, I began to be worried that information could be incredibly misleading so I stopped.
I know that is probably not the answer you were hoping for, but after a lot of consideration we have decided to not include it at this time.

Hi!!!! I did make this last night. OMG – was it ever good. But since it was a bit bland for my taste, I upped the garlic by 1 tablespoon; upped the poultry seasoning by 1 teaspoon and added 2 tablespoons of Mrs. Dash Original Seasoning. I also used Better than Bouillon Chicken base because it has no MSG. Oh – and I used Cremimi mushrooms – medium sliced and a finely diced red onion- Yum!!!
