I recently found a recipe for a low carb cheesecake with a peanut butter cookie crust in on of my favorite low carb cookbooks– Low Carb Essentials. I decided to simplify it a bit by turning it into a crock pot recipe and altered it with sugar free preserves to make it a peanut butter and jelly cheesecake! It was incredible. So much so that I asked Aunt Lou to make a full sugar version for all of my readers that are not eating low carb.

Using the Bake Feature on a Multicooker

Readers have been asking me for a while about the “bake” or “oven” features that are common on slow cooker multicookers.ย Different from traditional slow cookers, multicookers often allow users to brown/saute, slow cook and bake. This feature is common in multicookers like the Ninja. When users use the bake or oven feature, recipes cook more like oven recipes with shorter cooking times than when using the “slow cooker” feature. For example, this recipe was done in an hour using the the bake feature, but takes 3-4 hours using the slow cook feature.

How to Make Low Carb Cheesecake in a Slow Cooker

  • I personally like to use non-stick multicookers when making cheesecake, however, if you would like to use a traditional slow cooker, you can spray it well with cooking spray OR use the foil sling method that Aunt Lou used in her Crock Pot Peanut Butter Jelly Cheesecake and I used in our original Crock Pot Cheesecake.
  • Choosing a sugar substitue is a personal choice. We personally like to use Sukrin made of erythritol. You can get it on Amazon, but we buy it in bulk from their website. However, you can use your favorite sugar subsitute.

  • Spray a 6 quart slow cooker or multicooker well with cooking spray.
  • In a medium bowl, mix together your almond flour, melted butter, 1 egg that is beaten, peanut butter and 3 tablespoons of sugar substitute and then press them into a crust into your crock and prick with a fork.
  • If using a multicooker, bake at 350 for 10 minutes. If using a traditional slow cooker, skip to the next step.
  • Now you will want to take your ricotta cheese and put it in a food processor and blend until smooth.
  • Next, in a mixing bowl, cream together your cream cheese, smoothed ricotta cheese and remaining sugar substitute and liquid stevia with a mixer on medium speed until smooth. Scrape down the sides as needed.
  • In a separate bowl, mix together your heavy cream, remaining eggs and egg yolks, vanilla extract and lemon juice until well blended.
  • Add your egg mixture to your cream cheese mixture and mix in slowly, bumping up to medium speed once the liquid has started to mix in (and won't splash out). Mix on medium until just blended.
  • Finally pour your batter over your crust and place the lid on top. If using a multicooker bake at 350 for 60-90 minutes or in a traditional slow cooker, cook on low for 3-4 hours or until the center is almost set.
  • Carefully rotate your crock as needed throughout cooking to reduce uneven cooking.
  • Once cooking is done, carefully remove lid (do not let lid liquid drip into cheesecake) and place a clean cooking towel over the top of the crock. Be careful not to let the towel touch the top of the cake. Cool completely before slicing into 12 pieces.
  • Melt preserves in the microwave and slice cake and serve topped with melted preserves.
  • Store leftovers in the fridge or freezer.

  1. I understand that nutrition information such as fat, sugars, carbs all vary based on which ingredients you use but did you post the information for the ingredients as listed if I make it exactly according to your recipe, if so I could not find them? Please point me in the right direction.

      The nutrition information comes from an automated tool. As you know, the numbers can vary greatly from one brand to another. So we always recommend that people who have specific needs look at the ingredients they are using to calculate the nutritional information for themselves. There are various nutritional information calculators available online that you can put in the ingredients you have, and the calculator will give you the exact nutritional information for what you are using in a recipe. I hope this helps!

  3. when you buy the sukrin in bulk at their site, do you also get the brown sugar and the powder sugar and the nutella from them?? i just looked since i saw you make the peanut butter jelly cheesecake video and they have it on sale but you get all the different sugars not just the regular. or can you just buy the sukrin thats like regular sugar? i am not to good at this computer thing. i did order sukrin from amazon to see if i like it. hope it helps you that i went thur your site to buy it. love watching your family. thanks.

      I love the regular Sukrin, Sukrin+(for my coffee), the powdered, the brown and their chocolate bars. I just order it all in bulk a few times a year.
