I just love this electric pressure cooker version of our Crock Pot Butter Chicken. It allows me to make flavorful, shreddable chicken from frozen chicken in a matter of minutes! We love using this chicken for wraps, tacos, salads, soups, casseroles and more. And, we love that it is totally low carb and keto friendly! I have made this recipe countless times in my Instant Pot, Crock Pot Express and now regularly in my Ninja Foodi.
Notes on Electric Pressure Cooker Chicken (Low Carb)
- We have made this in my 6 quart Instant Pot, Crock Pot Express and 6.5 quart Ninja Foodi. but you can make it in any 6 quart electric pressure cooker.

Electric Pressure Cooker Chicken Recipe
Electric Pressure Cooker Chicken (Low Carb)
Ingredients
- 3 lbs Boneless Skinless Chicken Frozen
- 1 stick Butter
- 1 cup Chicken Broth
- Salt & Pepper to taste
Instructions
- Place frozen chicken in 6 or 6.5 quart Electric Pressure Cooker and add remaining ingredients.
- Set lid to seal and cook under high pressure for 10-12 minutes.
- Quick release pressure and shred chicken with two forks or in a stand mixer and then return to broth until ready to use in sandwiches, wraps, casseroles, salads, tacos and more!

I really enjoy my chicken to be fall a part tender. So, on the rare occasion that I use fresh in my IP, I usually cook it for 8-10 minutes depending on how much chicken I throw in there. Hope that helps!
