I love when the seasons change. Inevitably, when the weather changes from hot to cold, I want a yummy soup. Anyone else? When I saw this Crock Pot Sausage Chowder in Gooseberry Patch’s 303 ‘Round the Clock Recipes, I knew I had to try it. And once I tried it, I knew I had share it with you guys! Yum. Yum. Yum.

How to Make Sausage Chowder in a Crock Pot

Lightly brown your sausage in a skillet (or browning slow cooker) and drain. Mix together all of your ingredients in a 6-quart crock pot. Cover and cook on low for 6-8 hours or high for 3-4 hours. Serve with tortilla chips.

Ingredients

  • 14 oz smoked sausage links sliced
  • 1 onion diced
  • 2 cloves garlic minced
  • 15 oz can diced tomoates undrained
  • 4 oz can chopped green chiles undrained
  • 15.25 oz can corn undrained
  • 14.5 oz can chicken broth
  • 8 oz jar enchilada sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups water

Instructions

  1. What about adding a can of diced potatoes to the soup ? Would I need more broth

      I haven’t tried this with diced potatoes, but that sounds good. You could add them undrained without having to add extra broth, or you could drain them and use a little more broth. Whichever you prefer should be fine. If you give it a try, let me know how it goes!

      I haven’t tried doubling it in an 8 quart, but think it could work. Make sure you watch it closely the first time you make it to adjust the cooking time as necessary. If you give it a try, let me know how it turns out!
