Simple. Flavorful. Tender. Juicy. Sound good? This recipe is all of those things. The meat is great on its own or in as many recipes as your imagination can come up with…salad, wrap, sandwich, over rice, over noodles or add some veggies and use the delicious broth to make a soup. You’re gonna love it!

Garlic Crock Pot Butter Chicken Recipe

Garlic Crock Pot Butter Chicken (Low Carb)
Ingredients
- 2.5 lbs boneless skinless chicken (we prefer thighs)
- 4 tbsp butter
- 1/2 cup chicken broth
- 3 cloves garlic minced
- salt and pepper to taste
Instructions
- Place all ingredients in a 4 quart slow cooker.
- Cook on low for 4-5 hours or until chicken easily shreds with a fork.
- Remove chicken from slow cooker and shred with two forks or in a stand mixer.
- Return to juices to serve.
Notes
- This is NOT a copycat recipe of the takeout favorite that goes by the same name. This is simply called butter chicken because it is literally chicken cooked in butter.
- We like to use boneless skinless thighs in this recipe, but you can use breasts if you prefer. They may cook faster, so make sure to keep an eye on them the first time and check for when the chicken is easily pulled apart with two forks. If it is hard to pull apart it needs to cook longer. However, do not cook breasts too long or they will become dry and chalky.
- The broth from this chicken makes incredible soups.
- We like to eat this chicken on its own as a main or in casseroles, sandwiches, wraps, salads or tacos.
