We love cilantro in our house. The flavor of the cilantro and the lime in this recipe mix together perfectly. Oh. My. Yum. You could leave your chicken whole and serve with some great side dishes or shred it for wraps or sandwiches or tear into bite sizes pieces and serve with the juices over white or brown rice. It is so yummy! You’ll love it!

Crock Pot Cilantro Lime Chicken
Ingredients
- 2 lbs boneless, skinless chicken
- 2 tablespoons fresh cilantro chopped
- 1/4 cup onion finely chopped
- 2 cloves garlic minced
- 2 tablespoons lime juice
- 1 cup chicken broth
- salt and pepper to taste
Instructions
- Place your chicken in the bottom of a 4-quart crock pot
- Mix together your remaining ingredients in a bowl
- Pour your mixture over your chicken
- Cover and cook on low for 3-4 hours or high for 1.5-2 hours on high
- If desired, tear chicken apart with two forks into bite size pieces or until shredded
