This recipe is an oven version of Cris’ Crock Pot Bacon Cheddar Chicken. And it is super yummy! You and all you serve it to will absolutely adore it!

If you choose this method of cooking this yummy dish, my guess is that you are trying to save some time. Otherwise, you would be using your handy dandy slow cooker, right? ๐Ÿ˜‰ So I made a change to the recipe to make it cook up faster. Instead of keeping the chicken breasts or thighs whole, I cut them into cubes and mixed them in with all the other yummy ingredients. Another change I made that had nothing to do with timing, and everything to do with what I had on hand. I used sour cream instead of mayo. I had sour cream in the fridge, but no mayo. So, I thought I would give it a try. It was delicious! So, whether you want to use sour cream or mayo, it is sure to please!

This recipe is ready in under an hour, so it is great for a busy weeknight dinner or an easy weekend dinner or even for dish to bring to a potluck! It is a real crowd pleaser!

  • 1/2ย cupย sour cream
  • 8ย ozย cream cheeseย very soft
  • 2ย cupsย shredded cheddar cheese,ย divided
  • 8ย slicesย crisp baconย crumbled, divided
  • 3ย green onionsย chopped, divided

  • Preheat your oven to 400
  • Combine sour cream and cream cheese in a medium sized bowl until smooth.
  • In a large, bowl mix together your chicken, cream cheese mixture, half of the onions, half of the cheese and half of the bacon.
  • Spread your mixture in a greased 9×13 baking dish
  • Sprinkle rest of bacon, onions and cheese over top.
  • Bake for 25-30 minutes, turning halfway through if your oven does not cook evenly (It is done when your chicken reaches safe internal cooking temperature and your cheese is bubbly)
  • Serve with slotted spoon or slotted spatula.

  1. Very good! I believe that in the crock version it says that this is not a pretty looking dish. True. Lots of irrelevent liquid in the bottom when done. Definetly serve with a slotted spatula. I did not have any cheddar so I used Swiss. I also screwed up by mixing everything together at once instead of dividing the cheese and bacon. Someday I might go back and try to do it correctly, but the next few I times I make this I’ll just recreate tonight’s happy accident.

      Nope. You just cut it into cubes while it is raw and use those cubes in the recipe. I hope you enjoy this as much as we do!

      It really is Janis! You are going to love it! I haven’t tried it in a pressure cooker yet. It might work, but I can’t give specifics without testing it first. (I would rather say, “I don’t know” than give you bad advice!) If you give it a try, let me know how it turns out.

    Do you use uncooked chicken in the Bacon Cheddar Chicken Casserole recipe? Or Rotisserie Chicken?

      I used uncooked chicken. I haven’t tried it with rotisserie chicken, but love the idea! I think it wouldn’t need as long of a cooking time with rotisserie chicken though. If you give it a try, let me know how it turns out!
