How to Make Noodle Free Lasagna in a Slow Cooker

This is by far one of my favorite recipes. As a long time lasagna lover, I have a few low carb lasagna alternatives that I enjoy like our Crock Pot Lasagna Casserole. However, this Crock Pot Meatsagna (Noodle-Free Lasagna) comes as close to the real deal as I have ever made. I absolutely LOVE the flavor and my whole family devours it. This is one of those recipes I cannot WAIT for readers to try it is so good.
Can I use the Casserole Crock for this Recipe?
We have tested this recipe in a 6 quart slow cooker and also the casserole crock. While you can use either, we prefer the results in the 6 quart slow cooker. The edges tend to crisp up better and the meat layer retains its shape better. However, we did find that cutting portions in the casserole crock was easier. Like most things, it is up to you and your preferences.
Crock Pot Meatsagna Notes
- Much like regular lasagna, this dish tastes wonderful right after cooking but holds its shape better if allowed to cool for a bit. Leftovers are even better because the flavors set up overnight and the dish keeps its shape better after cooling.
- We use regular ground breakfast sausage in this recipe, however you can use ground Italian sausage if you prefer.
- Pork Rinds might sound like a weird ingredient, but trust us, they are just perfect for this recipe!
- You could substitute cottage cheese for the ricotta cheese if you do not like ricotta.
- We have tested this recipe in a 6 quart slow cooker and also the casserole crock. While you can use either, we prefer the results in the 6 quart slow cooker.

Crock Pot Meatsagna (Noodle-Free Lasagna)
Ingredients
Meat Layer
- 2 lb ground sausage
- 1/2 cup shredded parmesan
- 1 cup pork rinds crushed
- 1/2 cup heavy cream
- 2 eggs beaten
- 1 tablespoon Italian seasoning
- salt and pepper to taste
Sauce Layer (Divided)
- 24 oz Marinara Sauce We use a Low Carb Sauce
Cheese and Spinach Layer
- 16 oz Whole Milk Ricotta
- 4 cups Baby Spinach
Cheese Topping
- 3 cups Shredded Mozzarella Cheese
Instructions
- In a gallon sized baggie, mix together the all the ingredients for the meat layer and then dump into a 6 quart slow cooker and press into the bottom.
- Pour half of the marina sauce over the top of the meat layer.
- In a medium bowl mix together the ricotta cheese and spinach and spread evenly over the sauce.
- Top with remaining sauce and sprinkle mozzarella cheese over the top.
- Cook on high for 3.5 to 4 hours or until the meat layer is cooked through, the sauce is bubbly and the cheese begins to golden around the edges.
- Allow casserole to cool slightly before cutting into it. See note.
