Since going low carb, THIS soup has been a favorite in this house! It is a low carb version of one of our VERY popular soups on this site. We have been making this soup low carb in our crock pot AND as a low carb instant pot version for years but we are just now getting around to sharing it with you.   • This is a low carb adaptation of our popular regular Stuffed Pepper Soupย (and ourย Instant Pot Stuffed Pepper Soup).

Ingredients

Instructions

  • Cook ground beef in a skillet or in a browning slow cooker on saute setting with garlic and onion until browned through.
  • Drain and place in crock pot
  • Add all remaining ingredients.
  • Cook on low for 6-8 hours or on high for 3-4 hours
  • Serve with garnish.

    I made this for my family last night and everyone loved it! I was anticipating a large amount of leftovers, as there are only 3 people in my family, but we ate all of it. I canโ€™t wait to make this again. It is definitely a new family favorite. Thank you!
