How to Make Low Carb Stuffed Pepper Soup in an Instant Pot OR Crock Pot

Since going low carb, THIS soup has been a favorite in this house! It is a low carb version of one of our VERY popular soups on this site. We have been making this soup low carb in our crock pot AND as a low carb instant pot version for years but we are just now getting around to sharing it with you. We hope you enjoy it as much as we do!Our Low Carb Crock Pot Stuffed Pepper Soup is a low carb version of our very popular Crock Pot Stuffed Pepper Soup.

Notes on This Recipe

  • This is a low carb adaptation of our popular regular Stuffed Pepper Soup (and our Instant Pot Stuffed Pepper Soup).
  • Carb counters will want to pay special attention to the marinara sauce they use. We like to use Rao’s to lower our carb counts.
  • You can use any color bell peppers you would like. The color of bell pepper will slightly change the flavor of the soup. Mix and match your favorites!

Low Carb Crock Pot Stuffed Pepper Soup

Are you looking for a Low Carb Instant Pot Stuffed Pepper Soup? This is our tried and true recipe we have enjoyed for years! Bell peppers, ground beef and cauliflower rice in a tomato based soup make the perfect low carb soup!

Ingredients

  • 1 lb ground beef
  • 2 tablespoon dried minced onion
  • 1 tablespoon minced garlic
  • salt and pepper to taste
  • 3 cups beef broth
  • 24 oz marinara sauce We use the lowest carb sauce we can find
  • 1 cup riced cauliflower frozen
  • 2 cups bell pepper chopped
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • Garnish: Shredded Mozzarella or Cheese Curds

Instructions

  • Cook ground beef in a skillet or in a browning slow cooker on saute setting with garlic and onion until browned through.
  • Drain and place in crock pot
  • Add all remaining ingredients.
  • Cook on low for 6-8 hours or on high for 3-4 hours
  • Serve with garnish.
