Place your cubed potatoes in a large pot and cover with water.
Bring your water to a boil over high heat and boil for 8-10 minutes, until your potatoes reach desired tenderness.
Drain potatoes and pour your soups on top.
Sprinkle your mixes on top of the soups.
Use your broth to rinse out the can of cream of mushroom soup and drizzle over the top of your mixes.
Tear your pepper jack cheese into small pieces and put on top of everything.
Stir and place your pot back on the stove over medium heat for 2-3 minutes, stirring continually until your cheese has melted.
If your gravy isn't thick enough, put in more pieces of pepper jack cheese, stirring until the cheese is melted and combined with the sauce.
