Put one of your sliced apples in the bottom of a 6 quart slow cooker.
Place your chicken thighs on top of the apple slices.
Spread remaining apples on top of the chicken thighs.
Combine remaining ingredients in a small bowl.
Pour mixture over everything using a stirring spatula to get everything out of the bowl.
Cover and cook 4 to 6 hours on low or 2 to 3 hours on high, turning your insert halfway through cooking if your slow cooker does not evenly.
Serve chicken and apples with cooking juice spooned over top.
