Ingredients
1.5lbsboneless skinless chicken thighstrimmed (If you prefer white meat, you can make this with chicken breasts. To keep the cooking time similar, I recommend cutting the chicken breasts into thigh size pieces.)
Place chicken in the bottom of your 3 or 4 quart slow cooker.
In a small or medium size mixing bowl, mix together your tomato sauce, honey and sloppy joe mix.
Pour mixture over chicken.
Cover and cook 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, turning your insert halfway through cooking if your slow cooker does not cook evenly.
Using two forks, shred chicken into bite size pieces.
Serve on buns or over a bed of rice, if desired.
