Put all ingredients, except optional garnish, in a 6 quart crock pot and stir.
Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring halfway through cooking if possible. It is done when your chopped vegetables reach desired tenderness.
Serve as is with desired garnish, or, if desired, use an immersion blender to partially blend the soup to make it a little thicker.
