How to Make Black Bean Soup in a Crock Pot

I have loved black beans since the first time I had them in Guatemala. I even tried to recreate that recipe (and did pretty well, if I do say so myself), and you can find it here. When Cris and I were talking the other day about recipe ideas, she brought up my love of black beans, and now you have this wonderful Crock Pot Black Bean Soup recipe!
This recipe does have more prep work than most of my recipes. However, it is worth it to help the picky eaters in your house eat some veggies, and if you cut up your veggies the night before, you can just dump and go in the morning. As an added bonus, it looks really pretty too. With all the beautiful colors of the diced vegetables, this soup is called confetti soup in my house. It really does look like edible confetti, and it is delicious!
What You Will Need for Crock Pot Black Bean Soup
Ingredients Needed
- 61 oz black beans, undrained (4 – 15.25 cans)
- 1 cup diced carrots
- 2 ribs of celery, diced
- 1/2 large yellow onion, diced
- 1 red pepper, diced
- 5 gloves garlic, minced
- 1/4 cup cilantro, chopped
- 2 teaspoons ground cumin
- Salt and pepper to taste
- 32 oz vegetable broth
- Optional Garnish: Crushed tortilla chips, sour cream, fresh chopped cilantro, shredded cheese
Equipment Needed
- Can opener
- Sharp knife
- Cutting board
- Measuring cups
- Garlic press
- Measuring spoon
- Stirring spatula
- 6 quart slow cooker
- Optional: Immersion blender
Time Needed
- Prep Time: 20-30 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, stirring halfway through cooking, if possible

Crock Pot Black Bean Soup
Ingredients
- 61 oz canned black beans undrained (4 – 15.25 oz cans)
- 1 cup carrots diced
- 2 ribs celery diced
- 1/2 large yellow onion diced
- 1 red pepper diced
- 5 cloves garlic minced
- 1/4 cup fresh cilantro chopped
- 2 teaspoons ground cumin
- Salt and pepper to taste
- 32 oz vegetable broth
Instructions
- Put all ingredients, except optional garnish, in a 6 quart crock pot and stir.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring halfway through cooking if possible. It is done when your chopped vegetables reach desired tenderness.
- Serve as is with desired garnish, or, if desired, use an immersion blender to partially blend the soup to make it a little thicker.
