One of the very first meals that Michael made me when we were dating was the recipe this Crock Pot Sausage Green Beans and Potatoes for Two is based on. Since the original version is one of go-to recipes around here, I thought I would make it into a recipe with only two servings so everyone can enjoy this delicious meal.

When adding in the ground red pepper, I recommend remembering what Momma always taught me. When adding seasonings that aren’t measured, she would always tell me, “You can always add more in later, but you can’t take it out.” So, start with a small amount, give it a stir and a taste, and go from there…especially if you are sensitive to spicy foods (like me).

What You Will Need for Crock Pot Sausage Green Beans and Potatoes for Two

Ingredients Needed

  • 7 oz smoked sausage, sliced (You will use one link from the 14 oz package.)
  • 2 small russet potatoes, peeled and cubed
  • 15 oz can Italian style green beans, undrained
  • 1 1/2 cups chicken broth
  • 1 tablespoon diced onion
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon ground black pepper
  • Ground red pepper to taste

Time Needed

  • Prep Time: 15 minutes
  • Cooking Time: 4 to 6 hours on low or 2 to 3 hours on high, stirring at least once while cooking, if possible

    • Place your 2 small Russet Potatoes (peeled and cubed) in the bottom of your 2.5 quart, 3 quart or 4 quart crock pot.
    • Top with your diced 1 tablespoon yellow onion.
    • Add your 7 oz smoked sausage (cut into half inch slices), undrained 15 oz green beans and 1 1/2 cups chicken broth.
    • Sprinkle with 1/4 teaspoon garlic salt, 1/8 teaspoon Pepper and red pepper to taste.
    • Cover and cook on low for 4-6 hours or high for 2-3 hours, stirring at least once while cooking, if possible.
