This Crock Pot Chicken Potato Corn Chowder really is a great comfort food. I made this yesterday when it was warm and sunny. We all enjoyed a bowl (even my picky eater…score!). Today has been cool, and I have had to work outside in the wind and rain. I am really looking forward to a big ol’ bowl of this for dinner tonight to warm me up. It really works for any type of weather. Whatever your weather, I hope you enjoy this as much as me and my family do!

What You Will Need for Crock Pot Chicken Potato Corn Chowder

Ingredients Needed

  • 2.5 lbs boneless, skinless chicken thighs (or chicken breasts cut into thigh size pieces)
  • 4 cups frozen diced hash browns, thawed
  • 30.5 oz whole kernel sweet corn, undrained (2 – 15.25 oz cans)
  • 29.5 oz cream style corn (2 – 14.75 oz cans)
  • 24 oz evaporated milk (2 – 12 oz cans)
  • 1 medium yellow onion, chopped
  • 8 slices bacon, cooked crisp and crumbled
  • 1/2 teaspoon salt
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon ground black pepper
  • 1 1/2 teaspoons lemon pepper seasoning

  • Prep Time: 15 minutes
  • Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, stirring halfway through the cooking time, if possible, so that everything will cook evenly

  • Place 2 lbs boneless skinless chicken thighs, 4 cups frozen diced hash brown potatoes (thawed), 30.5 oz whole kernel corn (undrained), 29.5 oz cream-style corn, 24 oz evaporated milk, 1 medium yellow onion (diced), 7 slices bacon (cooked crisp and crumbled), 1/2 teaspoon salt, 1 teaspoon Worcestershire sauce, 1/4 teaspoon pepper, and 1.5 teaspoons lemon pepper seasoning in a 6 quart slow cooker and stir.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring halfway through the cooking time, if possible, so that everything will cook evenly.
  • Place chicken in a large bowl to shred with two forks or shred in your slow cooker, whichever you prefer.
  • Stir chicken in with the rest of the chowder until well blended.
  • If desired, top servings with the crumbles from 1 slice bacon cooked crisp and crumbled.
