How to Make Tomato Chicken Chowder in a Crock Pot

I absolutely love the Easy Crock Pot Tomato Soup recipe that our reader, Maude L., gave me a while back. It is simple to prepare, flavorful and a family favorite in my house. I was thinking of ways I could use that as a base for other soups. Then I thought of a chicken chowder and thought I would give it a try. I’m so glad I did! The flavor of this is divine!
If you are curious as to why I cooked the chicken prior to putting it in the crock pot, I promise there is a reason. I knew I wanted to keep this chowder very creamy. If I had cooked the chicken in the crock pot with the other ingredients, I would have ended up with a thinner chowder. So I cooked it ahead of time to keep the consistency and texture I wanted. The creaminess of this soup is wonderful!
My family was skeptical when they looked at all the ingredients I was putting together for this recipe. However, I told them they just had to try a bite. That was all it took. They devoured their bowls with smiles on their faces. I hope you enjoy this yummy and filling soup as much as we do!
What You Will Need Crock Pot Tomato Chicken Chowder
Ingredients Needed
- 1.5 lbs boneless, skinless chicken, cooked and cubed
- 14.5 oz can diced tomatoes, drained
- 48 oz spaghetti sauce (2 – 24 oz jars)
- 14.5 oz can corn, drained
- 14.5 oz can sliced carrots, drained
- 24 oz evaporated milk (2 – 12 oz cans)
- 1/4 cup grated Parmesan cheese
Equipment Needed
- Sharp knife
- Cutting board
- Pot
- Strainer (I love my clip on pot strainer.)
- Can opener
- Measuring cup
- Stirring spatula
- 6 quart slow cooker
Time Needed
- Prep Time: 15 minutes if cooking your chicken when putting the recipe together, 5 minutes if you have cooked your chicken ahead of time.
- Cooking Time: 2 to 3 hours on low, stirring occasionally

Ingredients

- 48 oz jar spaghetti sauce (2 – 24 oz jars)
- 24 oz evaporated milk (2 – 12 oz cans)
- 1/4 cup grated parmesan cheese
Instructions
- Put all of your ingredients in a 6 quart slow cooker and stir well.
- Cover and cook on low for 2-3 hours, stirring occasionally.
