How to Make Chicken Corn Chowder in a Crock Pot

So, I had the idea to use one of Cris’ old recipes and mix it up a bit by using cubed chicken instead of sliced smoked sausage. I figured it would be good. However, I was pleasantly surprised at the overwhelming response my family had to this Crock Pot Chicken Corn Chowder. I loved it. Michael told me he loved it. Ryder told me he loved it, and Iyla (my picky eater) asked for seconds!
So what was all the fuss about? All of the ingredients come together to give you a wonderful dish that is delicious and will fill you up. It really is a great comfort food for any time of year!

What You Will Need for Crock Pot Chicken Corn Chowder
Ingredients Needed
- 2.5 lbs boneless, skinless chicken, cubed
- 21.5 oz cream of potato soup (2 – 10.75 oz cans)
- 29.5 oz cream style corn (2 – 14.75 oz cans)
- 1/2 cup cooking sherry (or chicken broth)
- 1 cup chicken broth
- 1/4 cup red bell peppers, chopped
- 4 cloves garlic, minced
- Salt and pepper to taste
- Optional Garnish: Shredded cheddar cheese, crushed saltines or oyster crackers
Equipment Needed
- Sharp knife
- Cutting board
- Can opener
- Spoon
- Measuring cups
- Garlic press
- Stirring spatula
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, stirring halfway through cooking time, if possible.

Crock Pot Chicken Corn Chowder
Ingredients

- 1/2 cup cooking sherry or chicken broth

Instructions
- Mix together all your ingredients in a 6 quart slow cooker.
- Cover and cook on low for 6-8 hours or high for 3 to 4 hours, stirring halfway through cooking if possible.
- Serve as is or with optional garnish of shredded cheddar cheese and/or crushed saltines or oyster crackers.
Notes
- If you don’t like using cream of potato soup or creamed corn, this probably isn’t the recipe for you. You might look into our other Crock Pot Corn Chowder instead.
