The original recipe I adapted this Cheesy Crock Pot Sausage Hash Brown Casserole for Two recipe from was a major hit in my house. I thought this would be a great recipe to convert for our readers who need fewer servings. My son was the first to try this, and he told me it tasted great. Then I tried it, and I had to agree!
Not only does this recipe taste great, it is easy to throw together. This would be a great recipe for someone who is new to cooking, and will be a breeze to those of us who have been cooking for a long time. Whether you are a well seasoned cook or new to cooking, I hope you and whoever you share this recipe with enjoy it as much as we do in my house.

What You Will Need for Cheesy Crock Pot Sausage Hash Brown Casserole for Two
Ingredients Needed
- 7 oz smoked sausage, sliced (You will use one link of the 14 oz package.)
- 1 1/2 cups frozen shredded hash browns, kept frozen
- 10.5 oz can cheddar cheese soup
- 1 tablespoon onion, diced
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
Equipment Needed
- Sharp knife
- Cutting board
- Measuring cups
- Measuring spoons
- Can opener
- Spoon
- Stirring spatula
- 2.5 quart slow cooker, 3 quart slow cooker, 4 quart slow cooker OR 2.5 quart small casserole crock pot
Time Needed
- Prep Time: 5 to 10 minutes
- Cooking Time: 1 hour and 45 minutes to 2 hours and 30 minutes on high, rotating your insert halfway through cooking if your slow cooker does not cook evenly

Cheesy Crock Pot Sausage Hash Brown Casserole for Two
Ingredients
- 7 oz traditional rope sausage sliced, divided (You will use one link of the 14 oz package.)
- 1 1/2 cups frozen shredded hashbrowns
- 10.5 oz Cheddar cheese soup
- 1 tablespoon onion diced
- 1/2 teaspoon garlic powder
- 1/2 cup Shredded Cheddar Cheese
- Salt and Pepper to taste
Instructions
- Mix together your soups, onion, garlic powder and frozen shredded hashbrowns in a medium mixing bowl.
- Spread half of your rope sausage slices in the bottom of a lightly greased 2.5 quart slow cooker, 3 quart slow cooker, 4 quart slow cooker OR 2.5 quart small casserole crock pot.
- Top sausage slices with hashbrown mixture.
- Place your remaining sausage slices on top of everything.
- Sprinkle your shredded cheese evenly across the top.
- Cover and cook on high for 1 hour and 45 minutes to 2 hours and 30 minutes, turning your insert halfway through the cooking time if your slow cooker does not cook evenly.
