I have lots of names around here. Aunt Lou (yep, Lou is a nickname my Daddy gave me when I was a little girl), Carb Queen and Sugar Princess to name a few. I’m thinking Easy Comfort Food Queen might need to be added to the list. I love a simple recipe that is also comfort food! It makes making dinner for my crew so much easier! This Cheesy Crock Pot Sausage Hashbrown Casserole definitely fits that bill!

You might be wondering why I didn’t just mix everything together, throw it in the crock pot, top it with cheese and go. Honestly, that was what I had intended to do. Until I remember how much room 32 ounces of frozen hashbrowns takes up in a bowl! lol One of my brilliant, if I do say so myself ;), ideas this year was to start washing up our empty gallon ice cream buckets and using them as mixing bowls and storage bowls for larger recipes. They hold a ton of ingredients and it doesn’t matter if I have an ingredient that likes to stain a container! Win win! There was just enough room to mix up the hashbrowns, onions, garlic powder and soups. So I decided layering the sausage so there will be plenty of yummy sausage guaranteed in every serving!

  • 2 14 ounce packages of rope sausage, sliced and divided
  • 32 ounce bag of frozen shredded hashbrowns, kept frozen
  • 2 10.5 ounce cans of cheddar cheese soup
  • 1/4 cup onion, diced
  • 1 teaspoon garlic powder
  • pepper to taste
  • 1 cup shredded cheddar cheese
  • cooking spray

  • Mix together your soups, onion, garlic powder and frozen shredded hashbrowns in a large bowl
  • Spread one package of your rope sausage sliced in the bottom of a lightly greased casserole crock pot or 6-quart crock pot
  • Top sausage slices with hashbrown mixture
  • Place your remaining sausage on top of everything
  • Sprinkle your shredded cheese evenly across the top
  • Cover and cook on high for 2-3 hours, turning your insert halfway through the cooking time if your slow cooker does not cook evenly

    Thank you for this easy recipe! Myself and toddler love it! I halved the recipe, and only had cream of mushroom on hand so we used that. I added some frozen green and red pepper for sneaky veggies. Turned out great!

    I made this once before just as it was and it was fantastic. Went to make it again tonight and realized I only had one can of cheddar cheese soup, so I used that and a can of cream of chicken and it still turned out phenomenal. Thank you for the recipe!

      Hi Ed!

      I haven’t tried this in an oven before, but think it could definitely be done. A good starting place would be to look at the back of your hashbrown package to see what it recommends for cooking in the oven. If you give it a try, let me know how it goes!
