This Crock Pot Mexican Hamburgers for Two recipe is a loose meat sandwich like a Sloppy Joe, but it has a Mexican inspired flavor that is absolutely delicious.
With such a short cooking time, this is a great comfort food recipe for a busy weeknight. If you need the prep to be even faster, you can have this thrown together in 5 minutes or less by using our Crock Pot Make Ahead Ground Beef. I use this recipe all the time. The recipe says to freeze in bags with 1 lb of ground beef each, but you can also freeze the ground beef in 1/2 lb portions to suit your needs. Then you just have to thaw it when you are ready to make a recipe with cooked ground beef. It really helps to cut down on the prep time of a recipe.
What You Will Need for Crock Pot Mexican Hamburgers for Two
Ingredients Needed
- 1/2 lb ground beef, browned and drained
- 1/4 cup water
- 3/4 cup, plus 2 tablespoons tomato puree
- 1 tablespoon taco seasoning
- 2 hamburger buns
- Optional: American cheese slices
Equipment Needed
- Skillet and strainer (I like my on pot strainer.) or a micro cooker
- Meat chopper
- Measuring cups
- Measuring spoons
- Stirring Spatula
- 2.5 Quart Slow Cooker, 3 Quart Slow Cooker or 4 Quart Slow Cooker
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, stirring halfway through the cooking time if your slow cooker does not cook evenly

Crock Pot Mexican Hamburgers for Two
Ingredients
- 1/2 lb ground beef browned and drained
- 1/4 cup water
- 7 oz tomato puree (Seven ounces is equal to 3/4 cup, plus 2 more tablespoons.)
- 1 tablespoon taco seasoning
- 2 hamburger buns split
- slices cheese optional
Instructions
- Place your 1/2 lb ground beef (browned and drained) in a lightly greased 2.5 quart, 3 quart OR 4 quart crock pot.
- Pour in your 1/4 cup water, 7 oz tomato puree (this is 3/4 cup, plus 2 tablespoons), 1 tablespoon taco seasoning and give it a good stir.
- Cover and cook 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, stirring halfway through the cooking time if your slow cooker does not cook evenly.
- Serve on buns with cheese slices, if desired.
