This Poor Man’s Crock Pot Beefy Fajitas for Two recipe is super easy to throw together. You can slice up your peppers and onions while your ground beef is cooking. Then it is just layering of all your ingredients and a quick cooking time. It makes it perfect for a weeknight meal.

- 1/2 lb ground beef, browned and drained
- 10 slices red bell pepper
- 10 slices green bell pepper
- 1/3 small onion, sliced
- 10 slices yellow bell pepper
- 4 1/2 teaspoons fajita seasoning
- 1 teaspoon dried cilantro leaves
- 1/4 cup water

- Skillet and strainer or micro cooker
- Sharp knife
- Cutting board
- Measuring spoons
- Measuring cup
- 2.5 quart slow cooker to 4 quart slow cooker
- Slotted spoon (optional)
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 1 hour and 40 minutes to 2 hours on low or 50 minutes to 1 hour on high, stirring halfway through cooking time, it is done when your peppers and onions have reached desired tenderness

Poor Man’s Crock Pot Beefy Fajitas for Two
Ingredients
- 1/2 lb ground beef browned and drained
- 10 slices red bell pepper
- 10 slices green bell pepper
- 10 slices yellow bell pepper
- 1/3 large onion sliced
- 4 1/2 teaspoons fajita seasoning
- 1 teaspoon dried cilantro optional
- 1/4 cup water
- tortillas
- Favorite fajita toppings
Instructions
- Layer evenly in your 2.5 to 4 quart slow cooker in this order: onion slices, pepper slices (all three colors) and ground beef.
- Sprinkle your fajita seasoning packets and dried cilantro (if desired) evenly on top of everything.
- Drizzle your water all around.
- Cover and cook for 1 hour and 40 minutes to 2 hours on low or 50 minutes to 1 hour on high, stirring halfway through cooking time, it is done when your peppers and onions have reached desired tenderness.
- Stir everything together really well.
- Serve fajita beef and veggies on a tortilla with your favorite fajita toppings.
Notes
- If you want less juice in your tortilla, use a slotted spoon to scoop up your fajita beef and veggies and press down on the top with a non-slotted spoon (so the excess juices will drain out the slots) before putting your fajita beef and veggies into your tortilla.
