Crock Pot Poor Man’s Beefy Fajitas

My family loves steak fajitas. (You can find the Crock Pot Steak Fajitas recipe here.) My kids would eat them all the time if I would make them. However, that would get pretty expensive. So, Michael and I put our heads together to think of how we could have beef fajitas in a way that does not cost as much money. That is how we came up with these delicious Crock Pot Poor Man’s Beef Fajitas. We can now enjoy tasty beef fajitas for a fraction of the price!
While I love that these fajitas are cheaper to make, I also love that this recipe has great flavor and can be thrown together easily. If you can brown ground beef and slice bell peppers, you can make this recipe. It is sure to please!
I don’t usually make a comment on what to use when serving a recipe, but I have a tip for you on this one. There is a lot of liquid in the crock pot when you finish this recipe. This is how we put together our fajitas without having tons of juice. Take a slotted spoon and scoop up some beef and veggies. Then take another spoon and press down on what is in the slotted spoon to get some of the juices out. Then you can spread the beef and veggies out on your tortilla. Easy peasy!
What You Will Need for Crock Pot Poor Man’s Beefy Fajitas
Ingredients Needed
- 2 lbs ground beef, browned and drained
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2.5 oz fajita seasoning (2 – 1.25 oz packets)
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 1/2 cup water
- 1 tablespoon dried cilantro, optional
- Tortillas
- Your favorite fajita toppings
Equipment Needed
- Sharp knife
- Cutting board
- Micro cooker or skillet and strainer
- Measuring cup
- Measuring spoon
- 6 quart slow cooker
- Slotted serving spoon
- Non-slotted serving spoon
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 2 to 3 hours on low or 1 to 1.5 hours on high

Crock Pot Poor Man’s Beefy Fajitas
Ingredients
- 2 lbs ground beef browned and drained
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 yellow bell pepper sliced
- 1 large onion sliced
- 2.5 oz packets of fajita seasoning (2 – 1.25 oz packets)
- 1 tablespoon dried cilantro optional
- 1/2 cup water
- tortillas
- Favorite fajita toppings
Instructions
- Layer evenly in your 6 quart slow cooker in this order: onion slices, pepper slices (all three colors) and ground beef.
- Sprinkle your fajita seasoning packets and dried cilantro (if desired) evenly on top of everything.
- Drizzle your water all around.
- Cover and cook on low for 2-3 hours or high for 1-1.5 hours.
- Stir everything together really well.
- Serve fajita beef and veggies on a tortilla with your favorite fajita toppings.
Notes
- If you want less juice in your tortilla, use a slotted spoon to scoop up your fajita beef and veggies and press down on the top with a non-slotted spoon (so the excess juices will drain out the slots) before putting your fajita beef and veggies into your tortilla.
